Ingredients
For the Squash & Apples
- 1 1/2 lb (680 g) butternut squash, peeled, seeded, and cut into bite-sized cubes
- 3 medium apples, peeled, cored, and sliced
- 2 tbsp olive oil
- 3 tbsp pure maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Pecan Topping
- 3/4 cup (85 g) pecans, roughly chopped
- 2 tbsp all-purpose flour
- 2 tbsp brown sugar
- 2 tbsp cold unsalted butter, cut into small pieces
- 1/2 tsp ground cinnamon
- Pinch of salt
For Finishing
- 1 tbsp maple syrup
- 1 tbsp fresh thyme leaves
- 2 tbsp dried cranberries, optional
How to Make It
1. Preheat the Oven
Preheat your oven to 400°F (200°C). Lightly grease a 9 × 13-inch (23 × 33 cm) baking dish with a little oil or butter.
2. Prepare the Squash
Place the butternut squash cubes in a large bowl. Add the olive oil, 2 tbsp maple syrup, cinnamon, nutmeg, vanilla extract, salt, and black pepper.
Toss thoroughly until all the squash pieces are evenly coated with the maple-spiced mixture.
3. Start Roasting
Spread the seasoned butternut squash evenly in the prepared baking dish. Roast for 20 minutes to give the squash a head start and begin developing golden edges.
4. Add the Apples
Remove the baking dish from the oven and gently add the sliced apples. Toss carefully with the warm squash, making sure the apples are distributed evenly throughout the dish.
5. Make the Pecan Topping
In a small bowl, combine the chopped pecans, flour, brown sugar, cinnamon, and a pinch of salt.
Add the cold butter and use your fingertips to rub it into the pecan mixture until coarse, crumbly pieces form. Avoid overmixing so the topping stays textured and crisp when baked.
6. Add the Topping
Sprinkle the pecan mixture evenly over the squash and apples, covering the surface without pressing it down.
7. Finish Baking
Return the baking dish to the oven and bake for another 20–25 minutes, until the butternut squash is tender, the apples are softened, and the pecan topping is golden and lightly crisp.
8. Add the Maple Finish
Remove the bake from the oven and drizzle the remaining 1 tbsp maple syrup over the warm topping. This adds a glossy finish and an extra touch of maple flavour.
9. Garnish
Sprinkle fresh thyme leaves over the top. If using, add the dried cranberries for a bright pop of colour and a pleasant sweet-tart contrast.
10. Rest and Serve
Let the bake rest for 5–10 minutes before serving. This gives the flavours a chance to settle while keeping the topping pleasantly crisp.
Serve warm as a cozy side dish, holiday accompaniment, or lightly sweet dessert-style bake.
Why This Recipe Works
This bake works beautifully because the ingredients complement one another in both flavour and texture. Butternut squash becomes tender and naturally sweet as it roasts, while apples soften and add a fresh fruity note.
Maple syrup, cinnamon, and nutmeg bring warmth and sweetness without overpowering the main ingredients. The buttery pecan topping adds a wonderful contrast, with crunchy nuts and a lightly crisp, crumbly texture over the tender squash and apples.
A final drizzle of maple syrup and fresh thyme brings everything together. The thyme adds a subtle herbal note that keeps the dish balanced rather than overly sweet.
Tips for the Best Butternut Squash & Apple Bake
- Cut the squash evenly: Similar-sized cubes will cook at the same rate and become evenly tender.
- Choose firm apples: Apples that hold their shape well during baking give the dish better texture.
- Give the squash a head start: Roasting the squash before adding the apples helps prevent the apples from becoming too soft.
- Keep the butter cold: Cold butter helps create a crumbly pecan topping with a pleasant texture.
- Don’t overmix the topping: Leave some larger crumbs so the topping becomes crisp and textured in the oven.
- Watch the pecans: Check the topping toward the end of baking because nuts can brown quickly.
- Let it rest: A short resting period makes the bake easier to serve and allows the flavours to settle.
Serving Suggestions
This roasted squash and apple bake is a wonderful accompaniment to roasted turkey, chicken, pork, or other hearty main dishes. It fits especially well on a festive holiday table alongside other roasted vegetables and fresh salads.
For a lighter meal, serve it with a simple green salad and a bowl of soup. It can also be enjoyed as a lightly sweet side dish or served in smaller portions as a warm dessert-style treat.
Frequently Asked Questions
What apples are best for this bake?
Firm apples with a good balance of sweetness and acidity work well. Honeycrisp, Pink Lady, Granny Smith, Fuji, and Braeburn are all suitable choices.
Can I leave the apples unpeeled?
Yes. If you prefer more texture and colour, you can leave the apple skins on. Just wash the apples thoroughly before slicing.
Can I prepare this dish ahead of time?
You can prepare the squash and apple mixture and the pecan topping separately ahead of time. For the best texture, assemble and bake the dish close to serving time.
Can I use walnuts instead of pecans?
Yes. Walnuts make an excellent substitute for pecans and provide a slightly more earthy flavour while still giving the topping plenty of crunch.
Can I use honey instead of maple syrup?
Yes. Honey can be used in place of maple syrup, although it will give the dish a slightly different flavour. Maple syrup pairs particularly well with the cinnamon, apples, and pecans.
Can I make this bake less sweet?
Yes. Reduce the maple syrup in the squash mixture or omit the final maple drizzle. The natural sweetness of the apples and butternut squash will still give the dish plenty of flavour.

Notes
Cut the squash into similar-sized cubes so the pieces cook evenly. Use firm apples that hold their shape well during baking, such as Honeycrisp, Pink Lady, Granny Smith, Fuji, or Braeburn. Roasting the squash before adding the apples helps prevent the apples from becoming too soft. Keep the butter cold when making the pecan topping for the best crumbly texture. Do not overmix the topping. Leaving some larger crumbs helps it become crisp and textured. Watch the pecans toward the end of baking because they can brown quickly. Let the finished bake rest for 5–10 minutes before serving so the flavours can settle. The squash and apple mixture and pecan topping can be prepared separately ahead of time. For the best texture, assemble and bake close to serving time. Walnuts can be used instead of pecans. Honey can be substituted for maple syrup, although it will give the dish a slightly different flavour. To make the bake less sweet, reduce the maple syrup in the squash mixture or omit the final maple drizzle. Serve alongside roasted turkey, chicken, pork, roasted vegetables, or a simple green salad.
