How to Make It
1. Prepare the Oven and Chickpeas
Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper. Pat the chickpeas thoroughly dry with paper towels. Removing excess moisture helps them become crisp during roasting. Toss the chickpeas with olive oil, smoked paprika, garlic powder, dried oregano, kosher salt, and black pepper until evenly coated.
2. Season the Sweet Potato
Place the seasoned chickpeas on one side of the prepared baking sheet. In a separate bowl, toss the cubed sweet potato with olive oil, smoked paprika, dried thyme, kosher salt, and black pepper. Arrange the sweet potato cubes on the other side of the baking sheet, keeping everything in a single layer.
3. Roast Until Crisp and Tender
Roast the chickpeas and sweet potato for 25–35 minutes. Shake the chickpeas and turn the sweet potato cubes halfway through cooking so they brown evenly. The chickpeas should be crisp on the outside, while the sweet potato should be tender and lightly caramelised.
4. Make the Whipped Feta
While the vegetables roast, add the feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor. Blend until smooth and creamy. Add 1–2 tablespoons of water as needed until the feta reaches a soft, spreadable consistency.
5. Prepare the Honey Balsamic Dressing
Whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, fresh lemon juice, kosher salt, and black pepper until smooth and well combined. Set aside until the salad is ready to serve.
6. Assemble the Salad
Spread the mixed greens or baby spinach across a large serving platter. Add the cooked beetroot wedges, sliced cucumber, red onion, and fresh parsley. Spoon the whipped feta over the centre of the salad and gently spread it across the greens.
7. Add the Roasted Toppings
Arrange the warm roasted sweet potato and crispy chickpeas over and around the whipped feta. If using, scatter pumpkin seeds, fresh dill, and pomegranate arils over the top for extra crunch, colour, and freshness.
8. Dress and Serve
Drizzle the honey balsamic dressing over the salad just before serving. Serve immediately while the chickpeas are crisp, the sweet potatoes are warm, and the whipped feta is creamy.
Why This Recipe Works
This salad brings together a variety of textures and flavours without requiring complicated preparation. Crispy roasted chickpeas provide a savoury crunch, while roasted sweet potato adds natural sweetness and a soft, caramelised texture. Earthy beetroot, fresh greens, cucumber, and red onion keep the platter bright and refreshing.
The whipped feta is the creamy element that ties everything together. Its salty, tangy flavour pairs beautifully with the sweet honey balsamic dressing, while pumpkin seeds and pomegranate add extra texture and colour. Served as a composed platter, the salad also makes an impressive centrepiece for the table.
Tips for the Best Crispy Chickpea & Beetroot Salad
- Dry the chickpeas well: Patting them thoroughly dry before seasoning helps them roast more effectively and become crisp.
- Keep everything in a single layer: Avoid overcrowding the baking sheet so the chickpeas and sweet potatoes roast rather than steam.
- Watch the chickpeas: Roasting times can vary, so check them towards the end of cooking and remove them once crisp.
- Adjust the whipped feta: Add water gradually until the feta is smooth and easy to spread without becoming too thin.
- Dress just before serving: Adding the honey balsamic dressing at the last moment helps keep the greens fresh and the chickpeas crisp.
- Serve the components warm: The contrast between warm sweet potato, crisp chickpeas, cool vegetables, and creamy feta makes the salad especially enjoyable.
Serving Suggestions
Serve this salad as a generous main-course salad for lunch or dinner, or place it in the centre of the table as a colourful side dish. The combination of chickpeas, feta, vegetables, and sweet potato makes it hearty and satisfying on its own.
For a beautiful presentation, spread the whipped feta across the centre of a large platter before arranging the greens and roasted ingredients around it. Finish with pumpkin seeds, dill, and pomegranate arils, then add the dressing immediately before serving.
Frequently Asked Questions
Can I use baby spinach instead of mixed greens?
Yes. Baby spinach works very well in this salad and provides a tender base for the roasted sweet potato, beetroot, crispy chickpeas, and whipped feta.
Can I prepare the components ahead of time?
Yes. The whipped feta and honey balsamic dressing can be prepared ahead, while the beetroot and vegetables can be prepared before assembling. For the best texture, roast the chickpeas close to serving time.
Can I use a different cheese instead of blue-style or feta cheese?
Feta is the cheese used in the whipped feta component because its salty, tangy flavour works especially well with the sweet vegetables and honey balsamic dressing. If needed, another soft, tangy cheese can be used, although the texture may vary.
How can I keep the chickpeas crispy?
Make sure the chickpeas are thoroughly dry before roasting and avoid covering them after cooking. Add them to the salad shortly before serving so they retain as much crunch as possible.
Can I make the salad without the optional garnishes?
Absolutely. Pumpkin seeds, dill, and pomegranate arils are optional, so the salad will still be flavourful and colourful without them.
When should I add the dressing?
Add the honey balsamic dressing immediately before serving. This keeps the greens fresh and helps preserve the crisp texture of the roasted chickpeas.
