- 1 tsp honey
- 1 tsp lemon zest
- 1 garlic clove, minced
- Salt and freshly ground black pepper, to taste
Optional Garnish
- Fresh parsley
- Fresh dill
- Extra crumbled feta
- Lemon wedges
Method
- Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper and lightly brush it with olive oil.
- In a large mixing bowl, combine the ground chicken, ricotta, egg, panko breadcrumbs, Parmesan, minced garlic, parsley, lemon zest, oregano, onion powder, salt, and black pepper. Mix gently until everything is just combined. Avoid overmixing to help keep the meatballs tender.
- Shape the mixture into 20 to 24 evenly sized meatballs and arrange them on the prepared baking tray. Lightly brush or drizzle the tops with olive oil to encourage even browning.
- Bake for 18–22 minutes, or until the meatballs are lightly golden and reach an internal temperature of 165°F (74°C).
- Meanwhile, cook the orzo according to the package instructions. Drain, briefly rinse under cool water, and leave to cool slightly.
- Transfer the cooked orzo to a large serving bowl. Add the cucumber, cherry tomatoes, red onion, feta, Kalamata olives, parsley, and dill.
- In a separate bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, lemon zest, garlic, salt, and black pepper until well combined.
- Pour the dressing over the orzo mixture and toss gently until all the ingredients are evenly coated.
- Spread the dressed orzo salad over a large serving platter and arrange the warm baked chicken meatballs on top.
- Finish with fresh parsley, dill, extra crumbled feta, and lemon wedges if desired. Serve warm or at room temperature.
Tips
- Mix the meatball ingredients only until combined to help maintain a light, tender texture.
- Form the meatballs to a similar size so they cook evenly.
- Allow the cooked orzo to cool slightly before mixing it with the vegetables to help keep them crisp and fresh.
- Toss the salad gently after adding the dressing to keep the vegetables intact.
Serving and Storage
This dish is equally enjoyable served warm or at room temperature, making it suitable for family meals, packed lunches, or casual gatherings. Leftovers can be stored in an airtight container and enjoyed later. If preferred, keep the meatballs and orzo salad separate until serving to maintain their individual textures.
