Chocolate Namelaka: Silky, Creamy Japanese-Inspired Mousse
What Is Chocolate Namelaka?
Chocolate namelaka is a Japanese-inspired chocolate mousse known for its exceptionally smooth texture and rich, deep chocolate flavour. Unlike traditional mousse, which relies on whipped cream or egg whites for aeration, this version uses a small amount of gelatin to achieve its characteristic silky consistency. The name namelaka means “creamy” in Japanese, and this mousse lives up to that name in every way. It is perfect for a refined dessert experience, whether served on its own in individual cups, used as a filling for pastries, or piped onto cakes and tarts.

This creamy chocolate namelaka is a luxurious treat that combines the rich, bittersweet taste of dark chocolate with the smoothness of cream and the subtle sweetness of honey. Ingredients
- Gelatin sheets – 6g
- Dark chocolate (70% cocoa) – 280g
- Fresh cream – 400 ml
- Milk – 200 ml
- Honey – 20g
Method
- Place the gelatin sheets in a bowl of cold water and allow them to soak for 5–10 minutes until softened.
- In a small saucepan, combine the milk and honey and heat over a medium heat until warm—do not allow it to boil. Remove from the heat.
- Squeeze the excess water from the softened gelatin sheets and add them to the warm milk and honey mixture. Stir until the gelatin has completely dissolved.
- Finely chop the dark chocolate and place it in a large bowl. Pour the warm milk and gelatin mixture over the chocolate. Allow it to sit for a minute to melt the chocolate.
- Using an immersion blender, blend the mixture until it is completely smooth and glossy. If you do not have an immersion blender, a regular blender will work just as well.
- Add the cold fresh cream to the chocolate mixture and blend again until the mixture is silky, smooth, and fully emulsified.
- Pour the namelaka into a container or individual serving glasses. To prevent a skin from forming, press a piece of cling film directly onto the surface of the mousse.
- Refrigerate for at least 8 hours, or overnight, to allow the mousse to set and develop its signature creamy texture.
- Once set, serve the namelaka on its own, pipe it into tart shells, or use it as a filling for cakes. Enjoy!
