Crispy Zucchini Fritters: Paper-Thin & Perfectly Golden
What Are Zucchini Fritters?
Zucchini fritters are a dish found in various culinary cultures, each celebrating them in their own unique way. At their core, they are thinly sliced or grated zucchini combined with flour, seasonings, and sometimes eggs or cheese, then pan-fried or deep-fried until golden and crisp. Though humble in ingredients, fritters like these have long served as a clever way to make use of abundant summer vegetables, particularly in Mediterranean and Middle Eastern households, where zucchini grows generously in home gardens.
In Greek cuisine, they are known as kolokithokeftades—small, herb-scented patties often paired with tzatziki. In Turkish kitchens, a similar variation called mücver is flavoured with dill, mint, or feta cheese. Italian recipes lean into the fritters’ rustic charm, sometimes incorporating Parmesan or leftover breadcrumbs. Across cultures, the idea remains the same: transform fresh, watery zucchini into a crispy, savoury bite that feels both comforting and celebratory.
Ingredients
- Zucchini (courgette) – 140g
- All-purpose flour – 200g (1½ cups)
- Baking powder – 16g (1 tbsp)
- Salt – 10g (½ tbsp)
- Water – 200ml (¾ cup)
- Oil, for frying
Method
- Wash the zucchini, pat it dry thoroughly with kitchen paper, and trim off the ends. Using a mandolin slicer, slice the zucchini into paper-thin rounds—this ensures even cooking and maximum crispiness.
- In a large mixing bowl, whisk together the flour, baking powder, and salt. Pour in the water and whisk until the batter is smooth and completely lump-free. Take care not to overmix; a quick stir is all that is needed to keep the batter light and airy.
- Add the zucchini slices to the batter and gently toss until each slice is well coated on all sides.
- Pour oil into a high-sided saucepan or deep skillet to a depth of about 2–3 cm. Heat the oil over medium-high heat until it reaches 175–180°C (350–360°F). To test the temperature, drop a small amount of batter into the oil—if it sizzles and rises to the surface immediately, the oil is ready.
- Using a spoon, carefully scoop up a generous dollop of the battered zucchini mixture and gently lower it into the hot oil. Fry in batches, taking care not to overcrowd the pan, for 2–3 minutes per side, or until the fritters are deep golden brown and crisp.
- Remove the fritters with a slotted spoon and drain on kitchen paper to remove excess oil. Sprinkle with a little extra salt or grated Parmesan while they are still hot—the seasoning will adhere better and boost the flavour. Serve immediately with your favourite dip.
