Crumb-Coated Roasted Potatoes: Crispy, Golden & Delicious
What Are Crumb-Coated Roasted Potatoes?
Cooks across cultures have long experimented with herbs, cheeses, and coatings to elevate the humble potato into something memorable. This crumb-coated variation draws inspiration from rustic European kitchens, where breadcrumbs and Parmesan were traditionally used to create irresistibly crunchy textures. While this recipe does not come from a fancy bistro in Tuscany or an old English manor, it plays with timeless elements that never fail to impress: Parmesan for savoury umami depth, rosemary for piney freshness, and breadcrumbs for that satisfying crunch. The result is a side dish that feels like comforting, familiar food, yet presents beautifully enough to grace any dinner table.
Ingredients
- Potatoes – 600g
- Salt, to taste
- Dried rosemary
- Paprika
- Olive oil
- Parmesan cheese, grated
- Breadcrumbs – 100g (1 cup)
- Fresh rosemary sprigs (for baking and garnish)
Method
- Wash, peel, and dice the potatoes into bite-sized chunks. Place them in a bowl of cold water and leave to soak for at least 30–60 minutes. This crucial step removes excess starch, which helps the potatoes develop crispier edges during roasting.
- Bring a large pot of salted water to a rolling boil. Add the potatoes and cook for just 5 minutes—they should soften at the edges but still hold their shape firmly. Drain well and allow them to steam dry for a few minutes; this helps the coating adhere better.
- Transfer the warm potatoes to a mixing bowl. Season with salt, a sprinkle of dried rosemary, and a pinch of sweet paprika. Drizzle generously with olive oil—enough to coat but not drench, as too much oil can make the coating soggy. Add the grated Parmesan and breadcrumbs, then toss everything together until the potatoes are evenly coated.
- Arrange the potatoes in a single layer on a baking tray lined with parchment paper. Nestle a few fresh rosemary sprigs among them for added aroma and visual appeal. Place in a preheated oven at 180°C (356°F) and roast for 25 minutes, or until the crust is deep golden and crisp.
- Remove from the oven, scatter with a little fresh rosemary or parsley for brightness, and serve immediately while the crust is at its crispiest and most flavourful.
