Ingredients
For the Meatballs
- 500 g minced beef (or a mix of beef and pork)
- 1 large egg
- 3 tablespoons of breadcrumbs
- 2 cloves of garlic, finely chopped
- 2 tablespoons of very finely chopped onion
- 1 tablespoon of chopped fresh parsley
- Salt and black pepper to taste
- 1 teaspoon of dried oregano
For the Tomato Sauce
- 3 cloves of garlic, crushed
- 1 medium onion, finely chopped
- 2 ripe tomatoes, chopped (or 1 can of peeled tomatoes)
- 200 g of ready-made tomato passata
- 2 tablespoons of olive oil
- 1 teaspoon of sugar
- Salt to taste
- Dried oregano to taste
- Fresh basil to taste
- Black pepper to taste
- Enough water for the simmering process
- Green olives, sliced (optional)
For the Pasta
- 400 g of dried fettuccine
- Water and salt for boiling
Preparation
Step 1: Prepare the Meatballs
- In a large bowl, combine the minced meat, chopped garlic, chopped onion, the egg, breadcrumbs, parsley, salt, pepper, and oregano.
- Mix everything well with your hands until a uniform mixture forms. Be careful not to overwork the meat, as this can make the meatballs tough.
- With your hands, roll the mixture into meatballs of your desired size.
- Heat a drizzle of olive oil in a large frying pan or skillet over a medium-high heat. Add the meatballs in a single layer and brown them on all sides, turning them carefully. The aim is not to cook them through completely but to develop a rich, golden-brown crust that will enhance the flavour of the final dish.
- Once browned, remove the meatballs from the pan and set them aside on a plate.
Step 2: Make the Sauce
- In the same pan, add a little more olive oil and lower the heat to medium. Sauté the crushed garlic and the finely chopped onion until they are soft and translucent, about 5 minutes.
- Add the chopped fresh tomatoes (or canned tomatoes) and cook for a further 5 minutes, stirring occasionally, until they start to break down.
- Pour in the tomato passata and stir to combine. Season the sauce with the sugar, salt, pepper, oregano, and fresh basil.
- Carefully return the browned meatballs to the pan, nestling them into the sauce.
- Add enough water to the pan to just about cover the meatballs. Bring the sauce to a gentle simmer, then cover the pan with a lid.
- Let it cook for 10 to 15 minutes over a medium-low heat, until the meatballs are fully cooked and tender, and the sauce has thickened to a rich consistency. If you are using olives, add them in the final few minutes of cooking.
Step 3: Cook the Fettuccine
- While the meatballs are simmering, bring a large pot of generously salted water to a rolling boil.
- Add the fettuccine and cook according to the package instructions until it is al dente.
- Just before draining, reserve about a cup of the pasta cooking water, then drain the pasta well.
Step 4: Combine and Serve
- Add the cooked fettuccine directly to the pan with the meatballs and tomato sauce.
- Gently toss the pasta with the sauce for 2 to 3 minutes over a low heat, allowing the pasta to absorb all the delicious flavours. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it and create a silkier, creamier texture.
- Serve the fettuccine and meatballs immediately in warm bowls.
Finishing Touches
- Grated Parmesan cheese
- Fresh basil leaves for garnish
- A final drizzle of high-quality extra virgin olive oil
Chef’s Top Tip
The secret to an exceptional dish is in the browning. Don’t skip the step of thoroughly browning the meatballs before they go into the sauce. This creates a flavourful, caramelised crust that is absolutely essential to the final taste of the meatballs. It adds a depth of flavour that is truly unforgettable.
Notes
This dish is best enjoyed immediately, but any leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavours will continue to develop and meld together, making it just as delicious the next day.
