It’s quick enough for an easy weeknight lunch or dinner but colourful enough to serve at a casual gathering. The combination of smoky grilled chicken, salty feta, fresh herbs, and cranberry yogurt sauce makes every bite packed with flavour.

Ingredients

For the Grilled Chicken

• 1 lb (450 g) boneless, skinless chicken breasts
• 1 tbsp olive oil
• 1 tbsp fresh lemon juice
• 1 tsp dried oregano
• 1/2 tsp garlic powder
• 1/2 tsp smoked paprika
• 1/2 tsp salt
• 1/4 tsp black pepper

For the Cranberry Yogurt Drizzle

• 1/3 cup (80 g) cranberry sauce
• 1/2 cup (120 g) Greek yogurt
• 1 tbsp fresh lemon juice
• 1 tsp honey
• 1 tbsp olive oil
• 1/4 tsp garlic powder
• Pinch of salt
• 1–2 tbsp water, as needed

For the Flatbreads

• 4 medium flatbreads or naan breads
• 2 cups (60 g) mixed greens or baby spinach
• 3/4 cup (110 g) crumbled feta cheese
• 1/2 cup (75 g) cherry tomatoes, halved
• 1/4 small red onion, thinly sliced
• 1/4 cup (30 g) dried cranberries
• 2 tbsp fresh parsley, chopped
• 1 tbsp fresh mint, chopped

How to Make It

1. Marinate the Chicken

Place the chicken breasts in a large bowl. Add the olive oil, lemon juice, dried oregano, garlic powder, smoked paprika, salt, and black pepper. Toss thoroughly until the chicken is evenly coated. Let it marinate for at least 15 minutes to allow the flavours to develop.

2. Grill the Chicken

Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for 5–7 minutes per side, depending on its thickness, until golden on the outside and cooked through. The thickest part should reach 165°F (74°C). Transfer the chicken to a plate and let it rest for 5 minutes before slicing thinly.

3. Make the Cranberry Yogurt Drizzle

In a small bowl, whisk together the cranberry sauce, Greek yogurt, lemon juice, honey, olive oil, garlic powder, and salt until smooth. Add water, 1 tablespoon at a time, until the sauce reaches a creamy, easily drizzleable consistency.

4. Prepare the Toppings

Wash and thoroughly dry the mixed greens. Halve the cherry tomatoes, thinly slice the red onion, and chop the fresh parsley and mint. Set everything aside so the flatbreads can be assembled quickly.

5. Warm the Flatbreads

Heat the flatbreads on a dry skillet or grill for 30–60 seconds per side, until warm and lightly toasted. Avoid overheating them so they remain soft enough to fold or slice easily.

6. Build the Flatbreads

Place a warm flatbread on a serving board or plate. Add a layer of mixed greens, followed by the sliced grilled chicken, cherry tomatoes, red onion, crumbled feta, and dried cranberries.

7. Add the Cranberry Yogurt Drizzle

Generously drizzle the cranberry yogurt sauce over the chicken and vegetables. Try to distribute it evenly so every bite gets a little of the creamy, sweet-tart sauce.

8. Garnish

Sprinkle the flatbreads with fresh parsley and mint. Add a little extra feta and dried cranberries if desired for more flavour, colour, and texture.

9. Serve

Serve immediately while the flatbread is warm and the grilled chicken is juicy. Cut each flatbread into wedges for an easy lunch, dinner, or party-style meal.

Why This Recipe Works

This flatbread brings together a satisfying mix of flavours and textures. The grilled chicken is savoury, smoky, and juicy, while the warm flatbread provides a soft and lightly crisp base.

Creamy feta adds a salty richness that pairs beautifully with the sweet-tart dried cranberries. Fresh greens, tomatoes, red onion, parsley, and mint keep the dish bright and refreshing.

The cranberry yogurt drizzle is what ties everything together. Greek yogurt gives it a creamy texture, cranberry sauce adds fruity sweetness and tang, while lemon and garlic provide a fresh savoury balance.

Tips for the Best Chicken Flatbread

• Don’t skip the marinade: Even 15 minutes gives the chicken extra flavour and helps keep it juicy.
• Don’t overcook the chicken: Cook until the thickest part reaches 165°F (74°C), then let it rest before slicing.
• Dry the greens well: Excess water can make the flatbread soggy.
• Warm the flatbreads: A quick toast makes them more flavourful while keeping them soft and flexible.
• Adjust the drizzle: Add a little water if the cranberry yogurt sauce is too thick.
• Add the sauce just before serving: This keeps the greens and flatbread fresh.
• Use fresh herbs: Parsley and mint add a bright contrast to the richer chicken and feta.

Serving Suggestions

Serve these flatbreads with a simple cucumber salad, roasted vegetables, crispy potatoes, or a bowl of soup for a complete meal.

For entertaining, prepare all the ingredients separately and let everyone build their own flatbread. You can also cut the finished flatbreads into smaller wedges to create an easy appetizer or party platter.

A little extra cranberry yogurt drizzle on the side is perfect for dipping the crispy edges and chicken pieces.

Frequently Asked Questions

Can I use chicken thighs instead of chicken breasts?

Yes. Boneless, skinless chicken thighs are a great substitute and tend to stay especially juicy when grilled. Adjust the cooking time according to their size and make sure the internal temperature reaches 165°F (74°C).

Can I use pita bread instead of flatbread?

Absolutely. Pita, naan, or another soft flatbread can be used. Choose a sturdy variety that can hold the chicken and toppings without tearing.

Can I prepare the chicken ahead of time?

Yes. The grilled chicken can be cooked ahead, cooled, and refrigerated. Slice it just before assembling the flatbreads and gently reheat it if you prefer it warm.

Can I make the cranberry yogurt drizzle ahead?

Yes. The drizzle can be prepared in advance and refrigerated in an airtight container. Stir it well before serving and add a small splash of water if it has thickened too much.

Can I use another cheese instead of feta?

Yes. Goat cheese, crumbled ricotta salata, or even a mild blue cheese can work well. Each option will give the flatbread a slightly different flavour.

Can I make these flatbreads vegetarian?

Yes. Simply replace the chicken with grilled vegetables, roasted chickpeas, or crispy white beans. The cranberry yogurt drizzle, feta, and fresh herbs will still work beautifully.
