7-Layer Beet Salad

  • Author: vitalityrecipes
  • Total Time: 1 hour 10 minutes

Description

A colourful layered salad made with tender beets, crisp cucumber, juicy cherry tomatoes, chickpeas, shredded carrots, and a creamy Greek yogurt and feta layer, finished with fresh herbs, toasted walnuts, and lemon zest.

Ingredients

For the Beet Layer

4 medium beets (about 500 g), cooked, peeled, and diced

1 tbsp olive oil

1 tbsp fresh lemon juice

1/4 tsp salt

1/4 tsp black pepper

For the Creamy Layer

1 cup (225 g) Greek yogurt

2 oz (60 g) feta cheese, crumbled

1 tbsp fresh lemon juice

1 tsp honey

1 small garlic clove, minced

1 tbsp fresh dill, chopped

For the Vegetable Layers

1 large cucumber, diced

1 cup (150 g) cherry tomatoes, halved

1/2 small red onion, finely diced

1/2 cup (75 g) chickpeas, drained and rinsed

1/2 cup (50 g) shredded carrot

For the Topping

1/3 cup (50 g) crumbled feta cheese

2 tbsp fresh dill, chopped

2 tbsp fresh parsley, chopped

2 tbsp toasted walnuts, roughly chopped

1 tsp lemon zest

Instructions

1. Cook the beets until fork-tender, then allow them to cool enough to handle. Peel and dice them into small, even pieces.

2. Place the diced beets in a bowl and toss gently with olive oil, fresh lemon juice, salt, and black pepper. Set aside.

3. In a medium bowl, combine the Greek yogurt, crumbled feta, lemon juice, honey, minced garlic, and fresh dill. Stir until creamy and well combined.

4. Dice the cucumber and red onion into small pieces. Halve the cherry tomatoes and drain and rinse the chickpeas thoroughly.

5. Shred the carrot if needed. Pat the cucumber and chickpeas dry if they contain excess moisture to help keep the finished layers neat.

6. Choose a clear glass serving bowl or individual glass dishes. Spread the seasoned diced beets evenly across the bottom.

7. Spread the diced cucumber evenly over the beet layer.

8. Spoon the drained chickpeas evenly over the cucumber and gently spread them into an even layer.

9. Add the halved cherry tomatoes as the next layer, arranging them with the cut sides visible where possible.

10. Spread the shredded carrots evenly over the tomatoes.

11. Spoon the Greek yogurt and feta mixture over the vegetables and gently smooth the surface.

12. Scatter the finely diced red onion over the creamy layer.

13. Finish with crumbled feta, fresh dill, chopped parsley, toasted walnuts, and lemon zest.

14. Cover the salad and refrigerate for at least 30 minutes before serving.

15. Serve chilled as a colourful side dish, appetizer, or light lunch. For individual servings, use small clear glasses or jars to showcase the layers.

Notes

Let cooked beets cool before layering so they do not warm the other ingredients or soften the cucumber. Drain chickpeas well and pat watery vegetables dry to prevent the finished salad from becoming watery. Use a clear glass serving bowl or individual glasses to showcase the colourful layers. Spread each ingredient gently and evenly for a neat presentation. Toast the walnuts in a dry skillet for a few minutes to make them more fragrant and crunchy. Chill the salad for at least 30 minutes before serving for the best refreshing texture. Add the fresh herbs, walnuts, feta, and lemon zest shortly before serving for the best appearance. The salad can be assembled several hours ahead and kept covered in the refrigerator. For the best texture and freshness, enjoy the assembled salad within about 1–2 days. Goat cheese or crumbled queso fresco can be used instead of feta. Bell peppers, radishes, sweet corn, or other crisp vegetables can be added while keeping the layered structure. Individual clear glasses, jars, or small serving bowls work especially well for individual portions. Serve alongside grilled chicken, roasted fish, lamb, hummus, pita bread, olives, or roasted vegetables for a Mediterranean-inspired meal.
