Description
A fresh, colorful, and satisfying no-cook salad made with creamy avocado, hearty chickpeas, juicy cherry tomatoes, crisp cucumber, fresh dill and parsley, and an easy lemon dill dressing. Perfect for a quick lunch, light dinner, or refreshing side dish.
Ingredients
For the Salad
2 cans (15 oz / 425 g each) chickpeas, drained and rinsed
2 ripe avocados, diced
1 cup (150 g) cherry tomatoes, halved
1/2 English cucumber, diced
1/4 small red onion, finely diced
1/3 cup (20 g) fresh dill, chopped
2 tbsp fresh parsley, chopped
1/4 cup (35 g) crumbled feta cheese, optional
For the Lemon Dill Dressing
3 tbsp extra-virgin olive oil
2 tbsp fresh lemon juice
1 tsp honey
1 tsp Dijon mustard
1 small garlic clove, finely minced
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Drain and rinse the chickpeas thoroughly under cool running water. Pat them gently with paper towels to remove excess moisture.
2. Dice the avocados and cucumber, halve the cherry tomatoes, and finely dice the red onion. Chop the fresh dill and parsley, keeping a little extra aside for garnishing.
3. In a small bowl or jar, whisk together the extra-virgin olive oil, fresh lemon juice, honey, Dijon mustard, minced garlic, dried oregano, salt, and black pepper until smooth and emulsified.
4. Add the chickpeas, diced avocado, cherry tomatoes, cucumber, red onion, fresh dill, and parsley to a large serving bowl. Gently toss to distribute the vegetables and herbs evenly.
5. Pour the lemon dill dressing over the salad and toss gently until the chickpeas and vegetables are lightly coated without crushing the avocado.
6. Sprinkle the crumbled feta over the top if using. Gently fold it into the salad, keeping the avocado pieces chunky and intact.
7. Cover and refrigerate the salad for 15–20 minutes to allow the flavors to mingle while keeping the vegetables crisp and refreshing.
8. Finish with extra fresh dill, chopped parsley, and a little lemon zest. Serve with fresh lemon wedges if desired.
9. Serve chilled or at room temperature as a refreshing vegetarian lunch, light side dish, or Mediterranean-inspired salad.
Notes
Use ripe but firm avocados so they are creamy but still hold their shape when tossed. Dry the chickpeas well before adding them to prevent excess moisture from diluting the dressing. Use freshly squeezed lemon juice for the brightest flavor. Fold the avocado in gently to prevent the pieces from becoming mashed. Start with the recommended amount of dressing and add more only if needed. For the best texture, serve the salad soon after chilling. For make-ahead preparation, prepare the chickpeas, vegetables, herbs, and dressing ahead of time and add the avocado shortly before serving. Cooked dried chickpeas can be used instead of canned chickpeas. Make sure they are fully cooked, cooled, and well drained. The feta can be omitted for a dairy-free version or replaced with crumbled goat cheese. The lemon juice in the dressing helps slow avocado browning, but avocado is best cut shortly before serving. Add bell peppers, radishes, shredded carrots, corn, or chopped lettuce for extra color and crunch. Serve with warm pita bread, toasted sourdough, or crusty bread for a more substantial meal. This salad pairs well with grilled chicken, roasted fish, shrimp, or Mediterranean-style vegetables. For extra protein, add grilled chicken, hard-boiled eggs, or another favorite protein. For the best quality, enjoy leftovers within about a day after adding the avocado. Store refrigerated in an airtight container and gently toss before serving.
