Avocado Toast with Feta, Cherry Tomatoes, Cranberries & Walnuts is a fresh, colourful, and satisfying breakfast made with crisp toasted sourdough, creamy mashed avocado, tangy feta, juicy cherry tomatoes, toasted walnuts, and sweet dried cranberries. A drizzle of olive oil brings everything together for an easy breakfast or light lunch with plenty of contrasting flavours and textures.
Ingredients
4 slices sourdough or crusty bread
2 ripe avocados
1 tbsp fresh lemon juice
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder, optional
1/2 cup (75 g) cherry tomatoes, halved
1/2 cup (75 g) crumbled feta cheese
1/3 cup (40 g) walnuts, roughly chopped and toasted
1/4 cup (40 g) dried cranberries
Fresh basil leaves
1 tbsp fresh parsley or chives, chopped
1 tbsp extra-virgin olive oil
1 tsp honey, optional
Pinch of red pepper flakes, optional
Freshly cracked black pepper
Instructions
1. Toast the sourdough slices until golden and crisp around the edges while still slightly tender in the centre.
2. Cut the avocados in half, remove the stones, and scoop the flesh into a bowl. Add the lemon juice, salt, black pepper, and garlic powder if using. Mash with a fork until creamy but still slightly chunky.
3. Place the walnuts in a dry skillet over medium-low heat. Toast for 2–3 minutes, stirring frequently, until fragrant and lightly golden. Set aside.
4. Halve the cherry tomatoes and season lightly with a pinch of salt and freshly cracked black pepper.
5. Spread a generous layer of mashed avocado over each slice of toasted bread.
6. Scatter crumbled feta evenly over the avocado.
7. Arrange the cherry tomatoes over the feta, then add the dried cranberries and toasted walnuts.
8. Top each slice with fresh basil leaves and chopped parsley or chives.
9. Drizzle lightly with extra-virgin olive oil. Add a little honey and red pepper flakes if desired.
10. Finish with freshly cracked black pepper and serve immediately while the toast is crisp and the toppings are fresh.
Notes
Use ripe avocados that mash easily while still allowing you to keep a little texture.
Toast the bread well so it provides a crisp, sturdy base for the creamy avocado.
Toast the walnuts for a few minutes in a dry skillet to bring out their flavour and add crunch.
Assemble the toast just before serving to keep the bread crisp and the toppings fresh.
Honey adds sweetness, while red pepper flakes provide a little heat.
For the freshest result, prepare the avocado shortly before assembling the toast.
