Ingredients
For the Brie Bites:
200 g Brie cheese, cut into bite-sized cubes
1/2 cup (60 g) all-purpose flour
1 large egg, beaten
1 cup (100 g) finely crushed pistachios
1/2 teaspoon black pepper
Oil, for frying
For the Blackberry Hot Honey:
1/2 cup fresh blackberries
1/4 cup honey
1/2 teaspoon red pepper flakes
1 teaspoon fresh lemon juice
Pinch of salt
For the Pomegranate Crunch:
1/3 cup pomegranate arils
2 tablespoons chopped pistachios
1 tablespoon fresh mint, chopped
Instructions
Cut the Brie into bite-sized cubes.
Set up three shallow bowls with the flour, beaten egg, and finely crushed pistachios mixed with black pepper.
Dip each Brie cube into the flour, coating all sides lightly.
Dip the floured Brie into the beaten egg.
Roll thoroughly in the pistachio mixture, gently pressing the pistachios onto the cheese.
Refrigerate the coated Brie bites for 15 minutes to help firm the crust.
Add the fresh blackberries, honey, and red pepper flakes to a small saucepan.
Warm gently over low heat for 3–4 minutes, lightly crushing some blackberries as they soften.
Stir in the lemon juice and salt, then remove from the heat.
Heat approximately 1–2 inches of oil to 350°F (175°C).
Carefully add the coated Brie bites in small batches without overcrowding the pan.
Fry for approximately 1–2 minutes, turning carefully, until the pistachio coating is golden and crisp.
Remove with a slotted spoon and transfer to a paper towel-lined plate.
Arrange the crispy Brie bites on a serving platter.
Drizzle generously with the warm blackberry hot honey.
Scatter the pomegranate arils and chopped pistachios over the top.
Finish with fresh chopped mint.
Serve immediately while the Brie is warm and creamy.
Notes
Keep the Brie chilled until ready to coat so the cubes remain firm.
Press the pistachio coating gently but firmly onto the Brie.
Chill the coated bites before frying to help the crust stay intact.
Fry in small batches to maintain the oil temperature.
Drizzle the blackberry hot honey just before serving to keep the pistachio crust crisp.
