Description
Burrata in Pistachio-Basil Pesto with Puff Pastry Twists is an elegant appetizer featuring creamy burrata, vibrant basil pesto, crunchy pistachios, and golden Parmesan-seasoned puff pastry twists with a bright lemon finish.
Ingredients
1 cup (45 g) fresh basil leaves
1/3 cup (45 g) shelled pistachios
1/3 cup (35 g) grated Parmesan cheese
1 garlic clove
1/3 cup (80 ml) extra-virgin olive oil
1 tbsp fresh lemon juice
1/4 tsp salt
1/4 tsp black pepper
2 balls burrata cheese (about 4 oz / 115 g each)
1 tbsp extra-virgin olive oil
1 tsp lemon zest
Pinch of black pepper
1 sheet (about 230 g) puff pastry, thawed
1 egg, beaten
1/4 cup (25 g) grated Parmesan cheese
1/2 tsp dried Italian seasoning
1/4 tsp garlic powder
1 tbsp sesame seeds, optional
2 tbsp chopped pistachios
Fresh basil leaves
Lemon zest
1 tbsp hot honey, optional
Instructions
1. Add the fresh basil, pistachios, Parmesan, garlic, lemon juice, salt, and black pepper to a food processor. Pulse several times until the ingredients are finely chopped.
2. Slowly pour in the extra-virgin olive oil while blending until the mixture becomes thick, creamy, and spoonable. Taste and adjust the seasoning if needed.
3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Unroll the thawed puff pastry and brush the surface lightly with beaten egg.
4. Sprinkle the Parmesan cheese, Italian seasoning, garlic powder, and optional sesame seeds evenly over the pastry. Gently press the toppings into the pastry so they adhere during baking.
5. Cut the pastry into strips about 1 inch (2.5 cm) wide. Take each strip and twist it several times to create a spiral shape. Arrange the twists on the prepared baking sheet, leaving a little space between each one.
6. Lightly brush the tops with the remaining beaten egg. Bake for 12–16 minutes, or until the pastry is puffed, crisp, and deeply golden. Transfer the twists to a wire rack and let them cool slightly.
7. Place the burrata balls on a large serving platter. Drizzle lightly with extra-virgin olive oil and sprinkle with lemon zest and a pinch of black pepper.
8. Spoon the pistachio-basil pesto generously around and partially over the burrata, leaving some of the creamy cheese exposed for an attractive presentation.
9. Scatter the chopped pistachios and fresh basil leaves around the burrata. Add a little extra lemon zest for a bright, citrusy finish.
10. Arrange the warm or slightly cooled puff pastry twists around the burrata and pesto so they are easy to grab and dip into the creamy cheese and pesto.
11. Drizzle the platter with a small amount of extra-virgin olive oil. For a sweet-and-savory contrast, add a light drizzle of optional hot honey over the burrata and pesto.
12. Gently break open the burrata just before serving so the creamy center spreads into the pistachio pesto. Serve immediately with the crispy puff pastry twists for dipping and scooping.
Notes
Use fresh burrata for the best creamy texture and flavour. Serve it soon after opening.
Don’t over-blend the pesto. Pulse the pistachios and basil until finely chopped while keeping enough texture for a rustic pesto.
Keep the puff pastry cold while working with it so the twists hold their shape and puff nicely in the oven.
Leave space between the pastry twists on the baking sheet so hot air can circulate and crisp them evenly.
Serve the burrata at room temperature. Taking it out of the refrigerator shortly before serving allows its creamy texture and flavour to shine.
A small drizzle of hot honey creates a pleasant sweet-and-spicy contrast without overpowering the pistachio-basil pesto.
The pistachio-basil pesto can be prepared ahead and refrigerated in an airtight container. Bring it closer to room temperature before serving.
Fresh mozzarella can replace burrata, although burrata is especially suited to this recipe because its creamy centre blends beautifully with the pesto.
Almonds, walnuts, or pine nuts can be substituted for pistachios. The flavour will change slightly, but each works well with basil and Parmesan.
Bake the puff pastry twists several hours ahead if needed. Keep them uncovered or loosely covered at room temperature so they remain crisp.
Regular honey can replace hot honey for a milder finish, or the honey can be omitted entirely.
Serve the burrata platter with olives, cherry tomatoes, roasted vegetables, toasted sourdough, grilled bread, or a simple green salad.
Break open the burrata immediately before eating so the creamy interior spreads naturally into the pesto.
