Description

Caramelized Brussels Sprouts Skewers with Feta & Strawberry Hot Honey are an elegant Mediterranean-inspired side dish featuring perfectly roasted Brussels sprouts with crispy caramelized edges, creamy feta cheese, and a glossy homemade strawberry hot honey. Sweet, savoury, tangy, and gently spicy, these colourful skewers make an impressive addition to holiday tables, barbecues, or weeknight dinners.

Ingredients

For the Brussels Sprouts Skewers:

1½ lbs (680 g) Brussels sprouts, trimmed and halved

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

8 wooden skewers

For the Strawberry Hot Honey:

1 cup fresh strawberries, finely chopped

1/4 cup honey

1/2 teaspoon red pepper flakes

1 teaspoon fresh lemon juice

1 teaspoon lemon zest

Pinch of sea salt

For Serving:

3/4 cup crumbled feta cheese

2 tablespoons chopped fresh parsley or basil

Extra freshly cracked black pepper

Instructions

Soak the wooden skewers in water for at least 20 minutes.

Preheat the oven to 425°F (220°C).

In a large bowl, toss the Brussels sprouts with olive oil, garlic powder, smoked paprika, sea salt, and black pepper until evenly coated.

Thread the Brussels sprouts onto the soaked skewers, placing them close together with the cut sides facing outward whenever possible.

Arrange the skewers in a single layer on a parchment-lined baking sheet.

Roast for 25–30 minutes, turning halfway through, until the Brussels sprouts are tender with deeply caramelized golden edges.

Meanwhile, combine the strawberries, honey, red pepper flakes, lemon juice, lemon zest, and sea salt in a small saucepan.

Cook gently over low heat for 3–5 minutes, stirring occasionally until the strawberries soften and the sauce becomes glossy.

Transfer the roasted skewers to a serving platter.

Sprinkle generously with the crumbled feta cheese.

Drizzle with the warm strawberry hot honey.

Finish with chopped parsley or basil and freshly cracked black pepper.

Serve immediately while warm.

Notes

Choose Brussels sprouts that are similar in size for even roasting.

Do not overcrowd the baking tray to encourage caramelisation.

Roast until deeply golden for the best flavour.

Use fresh strawberries for the brightest hot honey.

Drizzle the sauce just before serving to keep the sprouts crisp.
