Ingredients
For the Roasted Vegetables:
3 medium sweet potatoes, peeled and cut into cubes (600 g)
4 medium carrots, peeled and cut into thick slices (400 g)
3 tbsp olive oil (45 ml)
2 tbsp maple syrup (30 ml)
1 tsp garlic powder (3 g)
1 tsp dried thyme (1 g)
1/2 tsp smoked paprika (1 g)
1/2 tsp kosher salt (3 g)
1/4 tsp black pepper (0.5 g)
For the Cranberry Glaze:
1 cup fresh or frozen cranberries (100 g)
3 tbsp honey (63 g)
2 tbsp balsamic vinegar (30 ml)
2 tbsp water (30 ml)
1 tsp fresh lemon juice (5 ml)
1/2 tsp orange zest (1 g)
For the Walnut Topping:
3/4 cup walnuts, roughly chopped (85 g)
1 tbsp maple syrup (15 ml)
1 tbsp unsalted butter (14 g)
1/4 tsp ground cinnamon (0.5 g)
For Serving:
2 tbsp fresh parsley, chopped (8 g)
1 tsp fresh thyme leaves (2 g)
Instructions
1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
2. Place the cubed sweet potatoes and sliced carrots in a large mixing bowl. Add the olive oil, maple syrup, garlic powder, dried thyme, smoked paprika, salt, and black pepper. Toss until all the vegetables are evenly coated.
3. Spread the vegetables in a single layer on the prepared baking sheet, leaving space between the pieces. Use two baking sheets if necessary to prevent overcrowding.
4. Roast for 30–40 minutes, turning the vegetables halfway through, until the sweet potatoes are tender, the carrots are softened, and the edges are golden and caramelized.
5. While the vegetables roast, combine the cranberries, honey, balsamic vinegar, water, lemon juice, and orange zest in a small saucepan.
6. Bring the cranberry mixture to a gentle simmer over medium-low heat. Cook for 8–12 minutes, stirring occasionally, until the cranberries soften and the liquid thickens into a glossy glaze.
7. Gently mash some of the softened cranberries with the back of a spoon, leaving a few whole for texture. If the glaze becomes too thick, add a small splash of water. Remove from the heat and set aside.
8. Melt the butter in a small skillet over medium-low heat. Add the chopped walnuts, maple syrup, and cinnamon.
9. Cook the walnuts for 3–4 minutes, stirring frequently, until fragrant and coated in the buttery maple mixture. Transfer them to parchment paper and let them cool slightly.
10. Transfer the roasted sweet potatoes and carrots to a large serving platter. Drizzle the cranberry glaze evenly over the vegetables.
11. Scatter the maple cinnamon walnuts over the top.
12. Garnish with fresh parsley and thyme leaves. Serve warm while the vegetables are tender, the glaze is glossy, and the walnuts remain crunchy.
Notes
Cut the sweet potatoes and carrots into similar-sized pieces so they roast evenly. Spread the vegetables in a single layer and avoid overcrowding the baking sheet to encourage caramelization rather than steaming. Frozen cranberries can be added directly to the saucepan without thawing. They may need a little extra cooking time. Taste the cranberry glaze before serving. Add a little more honey for sweetness or a squeeze of lemon juice for extra brightness. Watch the walnuts carefully because maple syrup can darken quickly. Stir frequently and cook over medium-low heat. Cool the maple cinnamon walnuts on parchment paper to help prevent them from sticking together. Pecans can replace walnuts, and maple syrup can replace the honey in the cranberry glaze for a different flavour. Prepare the vegetables, cranberry glaze, and walnut topping separately ahead of time. Assemble shortly before serving for the best texture. Store leftover vegetables in an airtight container in the refrigerator for 3–4 days. Keep the walnuts separate when possible. Reheat the vegetables in the oven until warmed through, then add the walnuts and fresh herbs. Roasted vegetables can be frozen without the glaze, walnuts, or fresh herbs, although their texture may soften after thawing. For a vegan version, replace the honey with maple syrup and use a plant-based butter alternative. Serve alongside roast chicken, turkey, baked salmon, roasted pork, or a vegetarian main course.
