Chickpea Quinoa Salad Jars

Description

Fresh, colorful, and satisfying make-ahead salad jars packed with fluffy quinoa, chickpeas, crisp cucumber, cherry tomatoes, shredded carrots, red onion, and fresh parsley. Layered with a bright homemade lemon Dijon dressing, these jars make an easy grab-and-go lunch for busy weekdays.

Ingredients

For the Lemon Dijon Dressing

1 tbsp olive oil

1 tbsp red wine vinegar

1 tbsp fresh lemon juice

1 tsp Dijon mustard

1/4 tsp salt

1 tbsp maple syrup

Black pepper, to taste

For the Salad Jars

3/4 cup cooked quinoa, cooled

3/4 cup cooked chickpeas, drained and rinsed

1/2 cup cherry tomatoes, sliced

1/2 cup cucumber, cubed

1/2 cup carrot, shredded

1/4 cup red onion, diced

1/4 cup fresh parsley, chopped

Instructions

1. If starting with uncooked quinoa, rinse 1/2 cup raw quinoa thoroughly under cold water. Combine it with about 1 cup water or vegetable broth in a saucepan.

2. Bring the quinoa to a boil, reduce the heat to low, cover, and simmer for about 15 minutes, or until the liquid is absorbed. Fluff with a fork and let it cool completely.

3. Make the lemon Dijon dressing by whisking together olive oil, red wine vinegar, lemon juice, Dijon mustard, salt, maple syrup, and black pepper until smooth and emulsified.

4. Drain and rinse the chickpeas thoroughly. Pat them gently with a clean towel if they are particularly wet to remove excess moisture.

5. Prepare the vegetables by slicing the cherry tomatoes, cubing the cucumber, shredding the carrot, dicing the red onion, and chopping the fresh parsley. Keep the vegetables separate until assembly.

6. Divide the lemon Dijon dressing between clean, sealable jars. The dressing should always go on the bottom.

7. Spoon the cooled quinoa over the dressing to create a sturdy layer that can absorb some of the dressing without becoming overly soggy.

8. Divide the chickpeas evenly between the jars and add them on top of the quinoa.

9. Continue layering with the cherry tomatoes, cucumber, shredded carrot, and red onion. Avoid packing the vegetables too tightly so the layers remain distinct.

10. Top each jar with fresh chopped parsley, keeping the herbs near the top and away from the dressing.

11. Seal the jars tightly and refrigerate them until ready to eat. Keep the jars chilled and upright for the best texture.

12. When ready to serve, empty the entire jar into a bowl and toss thoroughly so the lemon Dijon dressing coats the quinoa, chickpeas, and vegetables evenly. Serve immediately.

Notes

Cool the quinoa completely before assembling the jars. Warm quinoa can create condensation and affect the texture of the vegetables. Keep the dressing at the bottom, followed by quinoa and chickpeas, then the vegetables and herbs. Pat washed vegetables and chickpeas dry to remove excess moisture and help keep the salad fresh. Wide-mouth jars make layering and transferring the salad easier. Keep the jars upright so the dressing does not move into the vegetable layers before serving. For the best texture, keep the jars sealed and refrigerated and toss the salad only when you’re ready to eat. These jars can stay fresh for several days when properly layered and refrigerated. Canned chickpeas work perfectly. Drain and rinse them well before adding them to the jars. Brown rice, farro, couscous, or another sturdy grain can replace quinoa. Make sure the grain is completely cooled before layering. Quinoa and chickpeas are naturally gluten-free, but check packaged ingredients such as Dijon mustard and vinegar if preparing the recipe for someone who strictly avoids gluten. For additional protein, add grilled chicken, hard-boiled eggs, tofu, or another favorite protein while keeping all added ingredients properly chilled. Serve with warm pita bread, hummus, roasted vegetables, or a simple soup. Optional additions include avocado, feta cheese, olives, roasted peppers, corn, pumpkin seeds, or fresh herbs. If adding avocado, add it shortly before serving for the best texture. Adjust the dressing with extra lemon juice, maple syrup, Dijon mustard, or black pepper according to taste. Timing assumes the quinoa is already cooked and cooled. If preparing quinoa from scratch, allow about 15 minutes for cooking plus cooling time.
