Description
Cottage Cheese & Spinach Crustless Quiche is a simple, creamy and protein-rich dish made with cottage cheese, mozzarella, fresh spinach and eggs. With no pastry crust to prepare, this easy quiche comes together quickly and bakes into a light, savoury meal that’s perfect for breakfast, brunch, lunch or a simple dinner.
Ingredients
1 cup (225 g) cottage cheese
1 cup shredded mozzarella cheese
4 large eggs
1/4 cup (60 ml) milk
2 cups fresh spinach, chopped
1/2 cup onion, finely chopped
1/4 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
Instructions
1. Preheat the oven to 375°F (190°C). Lightly grease a 9-inch pie dish or small baking dish with olive oil.
2. Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and cook for 3–4 minutes, until softened. Add the chopped spinach and cook for another 1–2 minutes, until wilted. Remove from the heat and allow the mixture to cool slightly.
3. In a large bowl, whisk together the eggs, cottage cheese, milk, garlic powder, dried oregano, salt and black pepper until well combined.
4. Stir the shredded mozzarella, cooked spinach and onion into the egg mixture. Mix gently until the ingredients are evenly distributed.
5. Pour the mixture into the prepared baking dish. Spread it evenly across the dish so the filling cooks uniformly.
6. Bake for 30–35 minutes, until the centre is set and the top is lightly golden.
7. Remove the quiche from the oven and let it rest for 5–10 minutes. This gives the filling time to set and makes slicing easier.
8. Slice the quiche into wedges and serve warm with a simple green salad, roasted vegetables or fresh tomatoes.
Notes
There is no pastry crust required for this recipe.
Cook the spinach before adding it to the egg mixture so it incorporates evenly.
Soften the onion before baking for a sweeter, more tender texture.
Let the quiche rest for 5–10 minutes after baking so the centre can set properly.
Spread the mixture evenly in the baking dish to help it cook consistently from edge to centre.
