Ingredients
1 large flatbread or naan (about 150 g)
4 oz (115 g) soft goat cheese, crumbled
1/3 cup (80 g) cranberry sauce
1/2 cup (40 g) shredded mozzarella cheese
1/4 cup (30 g) walnuts, roughly chopped
1 tbsp fresh rosemary, finely chopped
1/2 tsp dried thyme
1/4 tsp black pepper
1/4 cup (60 g) cranberry sauce
1 1/2 tbsp balsamic vinegar
1 tbsp honey
1 tsp orange juice
2 cups (40 g) fresh arugula
1 tsp olive oil
1 tsp fresh lemon juice
Pinch of salt
2 tbsp pomegranate seeds
1 tbsp toasted walnuts
Fresh rosemary or thyme
Extra balsamic glaze, optional
Instructions
1. Preheat your oven to 425°F (220°C). Place the flatbread or naan on a parchment-lined baking sheet. For an especially crisp crust, place the baking sheet in the oven while it preheats.
2. In a small saucepan, combine 1/4 cup cranberry sauce, balsamic vinegar, honey, and orange juice. Warm over low heat for 3–5 minutes, stirring occasionally, until smooth and slightly thickened. Remove from the heat and set aside.
3. Spread 1/3 cup cranberry sauce evenly over the flatbread, leaving a small border around the edges.
4. Sprinkle the shredded mozzarella and crumbled goat cheese evenly over the cranberry layer.
5. Scatter the chopped walnuts over the cheese. Sprinkle with fresh rosemary, dried thyme, and black pepper.
6. Bake for 10–14 minutes, until the edges are crisp and golden and the cheese is warm and lightly melted. Watch closely during the final few minutes to prevent the edges from becoming too dark.
7. While the flatbread bakes, place the fresh arugula in a small bowl. Gently toss with olive oil, lemon juice, and a pinch of salt. Keep the arugula lightly dressed so it stays fresh and peppery.
8. Remove the flatbread from the oven and let it cool for 1–2 minutes. Scatter the dressed arugula evenly over the warm flatbread.
9. Drizzle the cranberry balsamic glaze generously over the flatbread, allowing it to fall across the goat cheese, cranberry, and arugula.
10. Sprinkle the pomegranate seeds and toasted walnuts over the top. Finish with fresh rosemary or thyme and another light drizzle of balsamic glaze if desired.
11. Cut the flatbread into wedges and serve immediately while the crust is crisp, the goat cheese is creamy, and the arugula is fresh and peppery.
Notes
Use a sturdy flatbread or naan so the base can support the toppings without becoming soggy.
Don’t overload the flatbread with cranberry sauce or cheese. A moderate amount helps keep the crust crisp.
