Cranberry Brie Flatbreads with Almonds & Thyme

Description

Cranberry Brie Flatbreads with Almonds & Thyme are an easy and elegant appetizer made with crisp golden flatbread, creamy melted Brie, sweet-tart dried cranberries, crunchy toasted almonds, fresh thyme, and an optional drizzle of honey.

Ingredients

3 naan or flatbread rounds

6 oz (170 g) Brie cheese, sliced

1/2 cup (60 g) dried cranberries

1/4 cup (25 g) sliced almonds

1 tbsp olive oil

1 tsp fresh thyme leaves

1/2 tsp salt

1/4 tsp black pepper

1 tbsp honey, optional

Instructions

1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

2. Place the naan or flatbread rounds on the prepared baking sheet. Lightly brush each flatbread with olive oil, concentrating on the surface while leaving a small border around the edges.

3. Arrange the sliced Brie evenly over each flatbread. Leave a small border around the edges so the cheese can melt without spilling excessively.

4. Sprinkle the dried cranberries evenly over the Brie, distributing them across the flatbreads so each bite gets a combination of creamy cheese and sweet-tart fruit.

5. Scatter the sliced almonds evenly over the top. The almonds will become lightly toasted as the flatbreads bake.

6. Sprinkle the flatbreads lightly with salt, black pepper, and fresh thyme leaves. Avoid using too much salt because Brie already has a naturally savoury flavour.

7. Bake for 8–12 minutes, or until the Brie is melted and bubbling and the edges of the flatbreads are crisp and golden. Watch the almonds toward the end so they don’t become overly browned.

8. Remove the flatbreads from the oven and drizzle lightly with honey if desired. The honey adds a delicate sweetness that complements the cranberries and creamy Brie.

9. Finish with a few additional fresh thyme leaves and a small scattering of sliced almonds for extra flavour and texture.

10. Let the flatbreads rest for 2–3 minutes so the cheese can settle slightly. Slice into wedges and serve warm while the Brie is creamy, the flatbread is crisp, and the almonds are crunchy.

Notes

Use good-quality Brie for the smoothest melt and richest texture.

Don’t overload the flatbread. A moderate layer of toppings helps the edges stay crisp.

Watch the almonds during the final few minutes of baking because they can brown quickly.

Add the honey after baking to preserve its delicate flavour and prevent it from becoming overly caramelized.

Use fresh thyme for a brighter and more aromatic flavour than dried thyme.

Serve the flatbreads warm while the Brie is soft, melted, and creamy.

Naan, pita-style flatbread, lavash, or other thin flatbreads can be used. Adjust the baking time depending on the thickness of the bread.

Dried cranberries are recommended because they provide concentrated sweetness and a chewy texture. Fresh cranberries are much more tart and contain additional moisture.

Camembert can be substituted for Brie because it melts similarly. Soft goat cheese can also be used for a tangier flavour.

The flatbreads can be assembled a few hours ahead and refrigerated until ready to bake. For the crispiest results, bake them shortly before serving.

Chopped pecans, walnuts, or toasted pistachios can be substituted for the almonds.

Honey is optional because the cranberries already provide sweetness, but a light drizzle creates an especially nice sweet-and-savoury balance.

Serve as a holiday appetizer or party snack, or pair with a green salad, roasted vegetables, soup, or grilled chicken for a more substantial meal.

For entertaining, cut the flatbreads into smaller wedges and arrange them alongside grapes, pears, olives, crackers, and other cheeses.
