Description

Cranberry Pistachio Energy Bites are easy no-bake snacks made with chewy Medjool dates, rolled oats, tart dried cranberries, crunchy pistachios, creamy nut butter, honey, vanilla, and cinnamon. Soft, chewy, and satisfying, these homemade bites are perfect for breakfast, lunchboxes, meal prep, or a quick afternoon snack.

Ingredients

1 cup old-fashioned rolled oats

1 cup pitted Medjool dates

1/2 cup dried cranberries

1/2 cup shelled pistachios

1/3 cup almond butter or peanut butter

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

Pinch of salt

1–2 tablespoons water, if needed

Instructions

Place the pitted Medjool dates into a food processor and pulse several times until they form a sticky paste.

Add the rolled oats, dried cranberries, pistachios, almond butter or peanut butter, honey or maple syrup, vanilla extract, cinnamon, and salt.

Pulse several times until everything is well combined while keeping some texture.

Check the consistency by pressing a little of the mixture between your fingers.

If the mixture is too dry, add 1 tablespoon of water and pulse again.

Add another tablespoon if needed until the mixture becomes sticky and easy to shape.

Scoop approximately 1 tablespoon of the mixture into your hands.

Roll firmly between your palms to form a compact ball.

Repeat with the remaining mixture.

Arrange the energy bites on a plate or tray.

Refrigerate for at least 30 minutes until firm.

Serve chilled or straight from the refrigerator.

Notes

Make sure the dates are completely pitted before processing.

Avoid over-processing if you want pieces of pistachio and cranberry throughout the bites.

Add water gradually to avoid making the mixture too wet.

Press the mixture firmly when shaping the balls.

Chilling helps the energy bites become firmer and easier to handle.
