Description

Ingredients

1 1/2 lb (680 g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 tbsp olive oil

1 tsp Italian seasoning

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 1/2 cups (300 g) dry orzo pasta

1 tbsp olive oil

1 small yellow onion, finely diced

3 garlic cloves, minced

3 cups (720 ml) chicken broth

1/2 cup (120 ml) heavy cream

1/3 cup (80 ml) balsamic vinegar

1 tbsp honey

1 cup (150 g) cherry tomatoes, halved

2 cups (60 g) fresh baby spinach

1/2 cup (50 g) grated Parmesan cheese

1/2 tsp Italian seasoning

1/4 tsp salt

1/4 tsp black pepper

6 oz (170 g) feta cheese, crumbled

1/3 cup (80 g) Greek yogurt

1 tbsp olive oil

1 tbsp fresh lemon juice

1 small garlic clove, minced

12 tbsp water, as needed

2 tbsp fresh parsley, chopped

1 tsp fresh thyme leaves

1 tbsp grated Parmesan

1 tsp balsamic glaze, optional


Instructions

1. Pat the chicken pieces dry with paper towels. Add the Italian seasoning, garlic powder, smoked paprika, salt, and black pepper. Toss well until every piece is evenly coated.

2. Heat 1 tbsp olive oil in a large deep skillet over medium-high heat. Add the seasoned chicken and cook for 6–8 minutes, turning occasionally, until golden brown and cooked through. Transfer the chicken to a plate and set aside.

3. Add another tablespoon of olive oil to the skillet if needed. Add the diced onion and cook for 3–4 minutes, stirring occasionally, until softened. Add the minced garlic and cook for another 30 seconds until fragrant.

4. Add the dry orzo directly to the skillet. Stir frequently and cook for 1–2 minutes, allowing the pasta to become lightly toasted.

5. Pour the chicken broth into the skillet and add the Italian seasoning, salt, and black pepper. Stir well, scraping up any flavorful browned bits from the bottom of the pan.

6. Bring the mixture to a gentle simmer. Reduce the heat to medium-low and cook for 9–12 minutes, stirring frequently, until the orzo is tender and most of the broth has been absorbed.

7. Stir in the balsamic vinegar, honey, halved cherry tomatoes, and heavy cream. Cook for 2–3 minutes, stirring gently, until the sauce becomes creamy and slightly glossy and the tomatoes begin to soften.

8. Stir in the fresh baby spinach and grated Parmesan. Cook for 1–2 minutes, until the spinach wilts and the Parmesan melts into the creamy orzo.

9. Add the cooked chicken back to the skillet. Stir gently to combine everything, then cook for another 1–2 minutes until the chicken is heated through.

10. Add the feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes until smooth and creamy. Add water, one tablespoon at a time, if needed to create a light, spreadable consistency.

11. Spoon the creamy balsamic chicken orzo onto serving plates or shallow bowls. Add generous dollops of whipped feta over the top of each serving.

12. Finish with fresh parsley, thyme leaves, and grated Parmesan. For an extra balsamic finish, add a light drizzle of balsamic glaze over each portion.

13. Serve immediately while the orzo is creamy, the chicken is tender, the tomatoes are warm and juicy, and the whipped feta is soft and tangy.

Notes

Cut the chicken into evenly sized pieces so they cook at the same rate and stay juicy.

Don’t skip toasting the orzo. A quick toast adds a subtle nutty flavour before the broth is added.

Stir the orzo frequently while it cooks because it can settle and stick to the bottom of the skillet.

Use freshly grated Parmesan because it melts more smoothly into the creamy sauce.

If your balsamic vinegar is particularly strong, add it gradually and taste before adding more.

Don’t overcook the chicken. Remove it from the skillet once cooked through and return it near the end to keep it tender.

The orzo thickens as it sits, so serve immediately while it is freshly cooked and creamy.

Boneless, skinless chicken thighs can be substituted for chicken breasts. They tend to stay especially juicy.

Half-and-half can be used instead of heavy cream for a lighter version. Additional chicken broth can also be used, although the finished dish will be less rich.

Small pasta shapes such as ditalini or small shells can replace orzo, but cooking times and liquid requirements may vary.

The whipped feta can be prepared ahead and refrigerated in an airtight container. Let it soften slightly before serving.

Baby spinach can be replaced with chopped kale, arugula, or Swiss chard. Sturdier greens may require additional cooking time.

Store leftovers in an airtight container in the refrigerator and enjoy within a few days. When reheating, add a small splash of chicken broth or water to loosen the orzo.

Serve with a simple green salad, roasted vegetables, steamed broccoli, grilled zucchini, or warm crusty bread.
