Description
Creamy Orzo with Roasted Butternut Squash and Spinach combines tender caramelized squash, silky Parmesan orzo, and fresh baby spinach for a cozy, satisfying meal that’s easy enough for a weeknight dinner.
Ingredients
1 1/2 lb (680 g) butternut squash, peeled, seeded, and cut into bite-sized cubes
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 1/2 cups (300 g) dry orzo pasta
1 tbsp olive oil
1 small yellow onion, finely diced
3 garlic cloves, minced
4 cups (960 ml) vegetable or chicken broth
1/2 cup (120 ml) heavy cream
1/2 cup (50 g) grated Parmesan cheese
3 cups (90 g) fresh baby spinach
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped
1 tbsp grated Parmesan
1/4 tsp red pepper flakes, optional
Instructions
1. Preheat your oven to 425°F (220°C). Place the cubed butternut squash in a large bowl and toss with olive oil, garlic powder, dried thyme, smoked paprika, salt, and black pepper until evenly coated.
2. Spread the seasoned squash in a single layer on a lined baking sheet, leaving enough space between the pieces so they roast instead of steam. Roast for 30–35 minutes, turning halfway through, until tender and caramelized around the edges.
3. While the squash roasts, heat 1 tbsp olive oil in a large deep skillet over medium heat. Add the finely diced onion and cook for 3–4 minutes, stirring occasionally, until softened and translucent.
4. Add the minced garlic and cook for another 30 seconds, just until fragrant.
5. Add the dry orzo directly to the skillet with the onions and garlic. Stir continuously for 1–2 minutes to lightly toast the pasta and allow it to absorb the aromatic flavours.
6. Pour the vegetable or chicken broth into the skillet. Add the Italian seasoning, salt, and black pepper. Stir well and bring the mixture to a gentle simmer.
7. Reduce the heat to medium-low and cook for 9–12 minutes, stirring frequently so the orzo doesn’t stick to the bottom of the skillet. Continue cooking until the orzo is tender and most of the broth has been absorbed.
8. Stir in the heavy cream and grated Parmesan cheese. Cook for another 1–2 minutes, stirring gently until the Parmesan melts and the orzo becomes creamy and smooth.
9. Add the fresh baby spinach and stir gently until it wilts into the creamy orzo, about 1–2 minutes.
10. Fold the roasted butternut squash into the creamy orzo, reserving a few golden pieces for the top. Stir gently so the squash stays intact.
11. Sprinkle the finished orzo with fresh parsley and extra grated Parmesan. Add red pepper flakes if desired.
12. Serve immediately while the orzo is warm, creamy, and silky. If it becomes too thick while sitting, stir in a small splash of warm broth to loosen it before serving.
Notes
Don’t overcrowd the squash on the baking sheet. Give the cubes plenty of space so they roast and caramelize instead of steaming.
Cut the butternut squash into similar-sized pieces so they cook evenly.
Stir the orzo frequently while it cooks because the pasta can settle at the bottom of the skillet and stick.
Use freshly grated Parmesan for the smoothest melting and best flavour.
Cook the spinach only until wilted. Adding it near the end helps keep its colour and fresh flavour.
Serve the orzo immediately because it continues absorbing liquid as it sits. Add a splash of warm broth if it becomes too thick.
Save a few caramelized squash pieces for the top. They add colour, texture, and an especially appetizing presentation.
Frozen butternut squash can be used, although it may not caramelize as deeply as fresh squash. Roast it from frozen and avoid overcrowding the pan.
For a vegetarian version, use vegetable broth instead of chicken broth.
Orzo gives this recipe its creamy, risotto-like texture, but another small pasta can be substituted if necessary. Adjust the cooking time and liquid as needed.
Pumpkin or another firm winter squash can be substituted for butternut squash.
Leftovers can be refrigerated in an airtight container. Reheat gently with a splash of broth or water to restore the creamy consistency.
For a higher-protein meal, serve with grilled chicken, roasted chicken, shrimp, turkey, or crispy chickpeas.
