Description

Creamy Shrimp Avocado Salad is a fresh, protein-packed dish made with tender shrimp, creamy avocado, crisp red onion, fresh herbs and a smooth lime dressing. Greek yogurt, mayonnaise, Dijon mustard, garlic and smoked paprika create a rich, savoury dressing with a bright citrus finish.

Ingredients

1 lb (450 g) cooked shrimp, peeled and deveined

2 large avocados, diced

Β½ cup red onion, finely diced

ΒΌ cup fresh cilantro or parsley, chopped

2 tablespoons fresh lime juice

β…“ cup plain Greek yogurt

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 garlic clove, minced

Β½ teaspoon smoked paprika

Salt and black pepper, to taste

Β½ cup cherry tomatoes, halved, optional

Lime wedges, for serving

Instructions

In a small bowl, combine the Greek yogurt, mayonnaise, Dijon mustard and minced garlic.

Add the fresh lime juice and smoked paprika.

Season with salt and black pepper to taste.

Whisk until the dressing is smooth and creamy.

Place the cooked shrimp in a large mixing bowl.

Add the diced avocado, finely diced red onion and chopped cilantro or parsley.

Add the halved cherry tomatoes if using.

Gently toss the ingredients together.

Pour the prepared dressing over the shrimp and avocado mixture.

Gently fold everything together until evenly coated, taking care not to break up the avocado.

Cover the bowl and refrigerate for 15–20 minutes.

Remove from the refrigerator and garnish with fresh herbs and lime wedges.

Serve chilled on its own, over lettuce, with toasted bread or alongside crackers.

Notes

Fold the salad gently so the avocado pieces remain intact.

Use fresh lime juice for the brightest flavour.

Chill for 15–20 minutes before serving to allow the flavours to come together.

Add cherry tomatoes for extra freshness and colour.

Fresh cilantro or parsley both work beautifully in this recipe.
