Ingredients
For the Crispy Chicken Cutlets:
4 boneless, skinless chicken breasts, thinly sliced (600 g)
1/2 cup all-purpose flour (65 g)
2 large eggs (100 g)
1 cup panko breadcrumbs (60 g)
1/2 tsp garlic powder (1.5 g)
1/2 tsp paprika (1 g)
1/2 tsp salt (3 g)
1/4 tsp black pepper (0.5 g)
3 tbsp olive oil (45 ml)
For the Warm Apple Feta Salad:
2 medium apples, thinly sliced (300 g)
4 cups mixed salad greens (120 g)
1/2 cup crumbled feta cheese (75 g)
1/3 cup walnuts, roughly chopped (40 g)
2 tbsp dried cranberries (20 g)
1 tbsp olive oil (15 ml)
1 tsp fresh thyme leaves (2 g)
For the Honey Dijon Glaze:
3 tbsp honey (63 g)
2 tbsp Dijon mustard (30 g)
1 tbsp apple cider vinegar (15 ml)
1 tbsp olive oil (15 ml)
1/2 tsp garlic powder (1.5 g)
1/4 tsp black pepper (0.5 g)
Instructions
1. Preheat the oven to 400°F (200°C) if you prefer to finish the chicken in the oven. Place the chicken breasts between sheets of parchment paper and gently pound them until they are an even thickness.
2. Set up three shallow bowls. Add the flour to the first bowl and the beaten eggs to the second. In the third bowl, combine the panko breadcrumbs with garlic powder, paprika, salt, and black pepper.
3. Coat each chicken cutlet lightly in flour, then dip it into the beaten egg. Allow any excess egg to drip off before pressing the chicken firmly into the seasoned panko breadcrumbs.
4. Heat the olive oil in a large oven-safe skillet over medium heat. Add the breaded chicken cutlets and cook for 3–4 minutes per side, or until golden brown and crisp. If needed, transfer the skillet to the preheated oven and cook for another 5–7 minutes, until the chicken reaches 165°F (74°C) in the centre.
5. While the chicken cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced apples and fresh thyme. Cook for 3–4 minutes, stirring gently, until the apples are warmed and slightly softened while still holding their shape.
6. Remove the apple skillet from the heat. Gently toss the warm apples with the mixed salad greens, crumbled feta, chopped walnuts, and dried cranberries.
7. Add the honey, Dijon mustard, apple cider vinegar, olive oil, garlic powder, and black pepper to a small saucepan. Warm over low heat for 1–2 minutes, stirring until the mixture is smooth and glossy. Avoid overheating the glaze.
8. Arrange the crispy chicken cutlets alongside the warm apple feta salad. Drizzle the honey Dijon glaze over the chicken and salad just before serving. Serve immediately while the chicken is crisp and the apples are still warm.
Notes
Gently pound the chicken to an even thickness so the cutlets cook evenly without becoming dry. Firmly press the panko breadcrumbs onto the chicken to create an even, crispy coating. Do not overcrowd the skillet so the chicken can brown properly and stay crisp. Choose firm, crisp apples that hold their shape when heated and have a balance of sweetness and tartness. Cook the apples gently until slightly softened while retaining some texture. Drizzle the honey Dijon glaze over the chicken just before serving to help keep the coating crisp. Boneless, skinless chicken thighs can be used instead of chicken breasts, but cooking time may vary. The honey Dijon glaze can be prepared ahead and gently rewarmed before serving. Another crumbly cheese can be substituted for feta if preferred. Prepare the individual salad ingredients ahead, but combine the warm apples with the greens, feta, walnuts, and cranberries shortly before serving.
