Crispy Flatbread with Brie, Cranberries & Toasted Walnuts with Hot Honey

Description

An easy appetiser featuring crisp golden flatbread topped with creamy melted Brie, sweet-tart dried cranberries, crunchy toasted walnuts, fresh thyme, and a warm homemade hot honey drizzle.

Ingredients

For the Flatbread:

2 flatbreads or naan (about 180 g)

1 tbsp olive oil (15 ml)

For the Topping:

6 oz Brie cheese, sliced (170 g)

1/2 cup dried cranberries (80 g)

1/2 cup walnuts, toasted and roughly chopped (60 g)

2 tbsp fresh thyme leaves (4 g)

For the Hot Honey:

3 tbsp honey (63 g)

1/2 tsp crushed red pepper flakes (1 g)

1 tsp fresh lemon juice (5 ml)

Instructions

1. Preheat the oven to 425°F (220°C). Place the flatbreads or naan on a baking sheet and lightly brush the tops with olive oil, spreading it evenly over the surface.

2. Arrange the sliced Brie evenly over each flatbread, leaving a small border around the edges. Scatter the dried cranberries, toasted walnuts, and fresh thyme leaves evenly over the Brie.

3. Bake for 8–12 minutes, or until the edges are crisp and golden and the Brie has melted and become lightly golden in places. Check around the 8-minute mark to prevent the edges from becoming too dark.

4. While the flatbreads are baking, combine the honey, crushed red pepper flakes, and fresh lemon juice in a small saucepan. Warm over low heat for 1–2 minutes, stirring gently, until the honey is warm and fragrant.

5. Drizzle the warm hot honey over the baked flatbreads while they are still warm. Let them cool for 2–3 minutes, then slice into pieces and serve.

Notes

Choose a good-quality Brie that melts smoothly for a creamy topping. Leave a small border around the edges so the flatbread stays crisp. Flatbreads can vary in thickness, so begin checking around the 8-minute mark. Toast the walnuts before using them for deeper flavour and extra crunch. Warm the honey gently over low heat without allowing it to become overly hot. Drizzle the hot honey just before serving to maintain the contrast between the crisp base and creamy toppings. Naan can be used instead of flatbread for a slightly softer and chewier centre. Camembert can be substituted for Brie, or another mild soft cheese that melts well. The hot honey can be prepared ahead and gently rewarmed before serving. For the best texture, bake the flatbread shortly before serving. Prepare the toppings in advance and assemble and bake the flatbread when needed. Serve warm as an appetiser, party snack, or sharing dish alongside a simple green salad or other small appetisers.
