Crispy Flatbread with Brie, Cranberries & Toasted Walnuts with a Hot Honey Drizzle

Description

An easy and elegant appetizer featuring crisp flatbread topped with creamy melted Brie, sweet-tart dried cranberries, crunchy toasted walnuts, fresh thyme, and a sweet-spicy hot honey drizzle. Perfect for holiday entertaining, parties, or a quick snack.

Ingredients

2 flatbreads or naan (about 250 g total)

4 oz (115 g) Brie cheese, sliced

1/4 cup (30 g) dried cranberries

1/4 cup (30 g) toasted walnuts, roughly chopped

1 tbsp (15 ml) olive oil

1 tbsp (15 ml) hot honey, or regular honey with a pinch of chili flakes

1/2 tsp (2 g) fresh thyme leaves

Optional: sea salt flakes for finishing

Instructions

1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.

2. Place the flatbreads or naan on the prepared baking sheet and brush each lightly with olive oil.

3. Arrange the sliced Brie evenly over each flatbread, leaving a small border around the edges.

4. Scatter the dried cranberries and toasted walnuts evenly over the Brie.

5. Bake for 8–10 minutes, until the Brie is melted and creamy and the edges of the flatbread are golden brown and crisp.

6. Remove the flatbreads from the oven and immediately drizzle the hot honey generously over the melted Brie, cranberries, and walnuts. If using regular honey, add a small pinch of chili flakes.

7. Sprinkle the fresh thyme leaves over the top and add a few flakes of sea salt if desired.

8. Let the flatbread cool for 1–2 minutes, then slice into wedges or bite-sized pieces.

9. Serve warm while the Brie is creamy and the flatbread is crisp.

Notes

Use a sturdy flatbread or naan that can hold the toppings without becoming too soft. Avoid overloading the flatbread with Brie or other toppings, as excess moisture can make the center soggy. If the walnuts are not already toasted, toast them briefly in a dry skillet for extra flavor and crunch. Hot honey pairs especially well with creamy Brie and tart cranberries. Regular honey can be combined with a pinch of chili flakes. Add the honey after baking to keep its flavor bright and create a glossy finish. The edible Brie rind can be left on. Trim it away if you prefer a smoother appearance or milder flavor. Camembert is an excellent substitute for Brie. Goat cheese or another mild soft cheese can also be used. Dried cranberries are recommended because they provide concentrated sweetness and a chewy texture. For the best crisp texture, assemble the flatbread shortly before baking and serve soon after it comes out of the oven. You can assemble the flatbread a short time ahead and refrigerate it until ready to bake. Serve as an appetizer, party snack, or holiday starter with olives, grapes, fresh fruit, additional cheese, toasted nuts, soup, roasted vegetables, or a simple green salad.
