Description

Crispy Parmesan Zucchini Potato Muffins are golden, savoury vegetable muffins made with grated zucchini, potatoes, Parmesan, mozzarella, and fresh chives. Crispy around the edges and tender in the centre, they make a delicious breakfast, side dish, snack, or easy appetiser.


Ingredients

2 medium zucchini, grated

2 medium potatoes, peeled and grated

2 large eggs

1/2 cup (50 g) grated Parmesan cheese

1/2 cup (50 g) shredded mozzarella cheese

1/3 cup (40 g) breadcrumbs

2 garlic cloves, minced

2 tbsp fresh chives or green onions, chopped

1/2 tsp dried oregano

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil, for greasing


Instructions

1. Preheat the oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with olive oil.

2. Grate the zucchini and potatoes. Place them in a clean kitchen towel and squeeze firmly to remove as much excess moisture as possible. This helps the muffins become crisp instead of soggy.

3. In a large bowl, combine the drained zucchini and potatoes with the eggs, Parmesan, mozzarella, breadcrumbs, garlic, chives, oregano, garlic powder, salt, and black pepper. Mix until evenly combined.

4. Divide the mixture evenly among the muffin cups, pressing it down gently so each muffin holds together. Fill each cup almost to the top.

5. Sprinkle a little extra Parmesan or mozzarella over each muffin for a golden, crispy topping.

6. Bake for 25–30 minutes, until the muffins are firm, golden brown, and crisp around the edges.

7. For an extra golden finish, switch the oven to broil/grill for the final 1–2 minutes, watching carefully.

8. Let the muffins rest in the tin for 5–10 minutes before removing them. This allows them to firm up.

9. Finish with freshly chopped chives or green onions and a little freshly cracked black pepper. Serve warm.

Notes

Squeeze the zucchini and potatoes well because removing excess moisture is essential for crisp edges and firm muffins.

Press the mixture firmly into the muffin cups so each muffin holds its shape when removed.

Let the muffins rest for several minutes after baking to make them easier to remove.

Watch the broiler carefully because the cheese can brown quickly during the final 1–2 minutes.

Serve warm while the cheese is still soft and flavourful.

They can be prepared ahead and gently reheated before serving.

Parmesan provides a savoury flavour while mozzarella contributes a softer, melty texture.
