Description

Elegant crispy potato towers made with thinly sliced Yukon Gold potatoes, Parmesan, creamy whipped feta, and a sweet honey walnut crunch. Fresh herbs, lemon zest, and optional pomegranate seeds add a bright finish to this impressive appetiser.

Ingredients

For the Crispy Potato Stacks

2 lb (900 g) Yukon Gold potatoes, thinly sliced

3 tbsp olive oil

1 tsp garlic powder

1/2 tsp dried thyme

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/3 cup (35 g) grated Parmesan cheese

For the Whipped Feta

6 oz (170 g) feta cheese, crumbled

1/3 cup (80 g) Greek yogurt

1 tbsp olive oil

1 tbsp fresh lemon juice

1 small garlic clove, minced

1–2 tbsp water, as needed

For the Honey Walnut Crunch

1/2 cup (60 g) walnuts, roughly chopped

2 tbsp honey

1 tbsp brown sugar

1/4 tsp cinnamon

Pinch of salt

For Garnishing

1 tbsp fresh parsley, chopped

1 tsp fresh thyme leaves

1 tbsp pomegranate seeds, optional

1 tsp lemon zest

Instructions

1. Preheat the oven to 400°F (200°C). Lightly grease a large muffin tin or small oven-safe ramekins with olive oil. Wash the Yukon Gold potatoes thoroughly and slice them into very thin, even rounds.

2. Place the potato slices in a large bowl. Add the olive oil, garlic powder, dried thyme, smoked paprika, salt, black pepper, and Parmesan cheese. Toss gently until every potato slice is evenly coated.

3. Arrange the seasoned potato slices into tall stacks inside the prepared muffin cups or ramekins. Layer the slices evenly and gently press each stack down as you build it so the potatoes stay compact during baking.

4. Loosely cover the muffin tin with foil and bake for 30 minutes. Remove the foil and continue baking for another 20–25 minutes, until the potatoes are tender in the centre and deeply golden and crispy around the edges.

5. While the potatoes bake, add the feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes until smooth and creamy. Add a little water, one tablespoon at a time, if needed to reach a light, spreadable consistency.

6. Place the chopped walnuts in a dry skillet over medium-low heat. Toast for 2–3 minutes, stirring frequently. Add the honey, brown sugar, cinnamon, and salt.

7. Stir the walnut mixture for another 1–2 minutes, until the walnuts are glossy and lightly caramelised. Transfer them to a sheet of parchment paper and let them cool completely so the coating can firm up.

8. Remove the potato stacks from the oven and let them rest for 5–10 minutes. Carefully loosen the edges with a small knife, then gently lift the stacks from the muffin tin or ramekins.

9. Spoon or pipe a generous amount of whipped feta onto each serving plate. Place one crispy potato tower on top of or beside the whipped feta.

10. Break the cooled honey walnut mixture into small pieces if necessary. Sprinkle the walnut crunch generously over the potato towers and whipped feta.

11. Finish with fresh parsley, thyme leaves, and lemon zest. Add a few pomegranate seeds for a bright pop of colour and a fresh contrast to the rich flavours.

12. Serve immediately while the potato stacks are hot and crispy, the whipped feta is creamy, and the honey walnuts have a satisfying crunch.

Notes

Thin, consistent potato slices help the stacks cook evenly and hold together. Press the potato layers gently together as you build the towers so they stay compact during baking. Yukon Gold potatoes provide a creamy centre and crisp edges, but other waxy or all-purpose potatoes can also work. Keep the walnut mixture over medium-low heat and stir frequently because honey and brown sugar can caramelise quickly. Let the potato stacks rest for 5–10 minutes before removing them from the muffin tin to make them easier to handle. For the crispiest result, bake the potato stacks close to serving time. The whipped feta and honey walnut crunch can be prepared ahead and kept separately. Pecans can be used instead of walnuts. Pomegranate seeds are optional and add colour, freshness, and a little tartness. Serve as an appetiser for dinner parties, holiday gatherings, brunches, or special family meals. The potato towers also work well as a side dish with roasted chicken, grilled vegetables, roasted fish, or a fresh green salad.
