Description
Crispy Roasted Pumpkin with Whipped Feta, Hot Honey & Toasted Pistachios combines golden caramelized pumpkin with silky whipped feta, crunchy toasted pistachios, sweet-spicy hot honey, and fresh herbs for a beautiful vegetarian appetizer or side dish.
Ingredients
2 lb (900 g) pumpkin or butternut squash, peeled, seeded, and cut into bite-sized cubes
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
6 oz (170 g) feta cheese, crumbled
1/4 cup (60 g) Greek yogurt
1 tbsp olive oil
1 tbsp fresh lemon juice
1 small garlic clove, minced
1–2 tbsp water, as needed
1/3 cup (45 g) shelled pistachios, roughly chopped
2–3 tbsp hot honey
1 tbsp fresh parsley, chopped
1 tsp fresh thyme leaves
1/2 tsp red pepper flakes, optional
Instructions
1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper. For extra-crispy pumpkin, place the empty baking sheet in the oven while it preheats so the surface becomes hot.
2. Add the pumpkin or butternut squash cubes to a large mixing bowl. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, dried thyme, salt, and black pepper. Toss thoroughly until every piece is evenly coated.
3. Carefully remove the hot baking sheet from the oven and spread the pumpkin cubes over it in a single layer. Leave space between the pieces so they roast rather than steam. Roast for 30–40 minutes, turning the pieces halfway through, until tender in the centre and golden brown with crisp, caramelized edges.
4. While the pumpkin is roasting, add the crumbled feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes, scraping down the sides if necessary, until smooth and creamy.
5. If the whipped feta is too thick, add water a little at a time until it reaches a soft, spreadable consistency. Taste and adjust the texture as needed.
6. Place the chopped pistachios in a dry skillet over medium-low heat. Toast for 2–3 minutes, stirring frequently, until fragrant and lightly golden. Watch carefully because nuts can burn quickly. Remove from the heat and let them cool slightly.
7. Spoon the whipped feta onto a large serving plate or shallow platter. Use the back of a spoon to spread it into a generous, even layer, leaving attractive swirls across the surface.
8. Arrange the hot roasted pumpkin over the whipped feta, keeping some of the browned and crispy edges visible.
9. Drizzle the hot honey generously over the roasted pumpkin and whipped feta. Adjust the amount according to your preferred level of sweetness and heat.
10. Scatter the toasted pistachios over the top. Finish with fresh parsley, thyme leaves, and red pepper flakes if desired.
11. Serve immediately while the pumpkin is warm and crisp and the whipped feta is creamy. Serve as an appetizer, side dish, or light vegetarian meal.
Notes
Don’t overcrowd the baking sheet. Give the pumpkin plenty of space so moisture can escape and the edges can become crisp.
Preheat the baking sheet before adding the pumpkin for better browning and crispier edges.
Cut the pumpkin or butternut squash into evenly sized pieces so everything cooks at the same rate.
Roast at 425°F (220°C) to encourage caramelization and prevent the pumpkin from becoming pale and overly soft.
Toast the pistachios carefully and stir frequently because they can burn quickly.
Add the hot honey after roasting to preserve its fresh sweetness and spicy flavour.
Serve immediately for the best contrast between warm crispy pumpkin and creamy whipped feta.
The whipped feta can be prepared ahead of time and stored covered in the refrigerator. Let it sit out briefly before serving so it becomes easier to spread.
Regular honey can be substituted for hot honey. For extra heat, mix regular honey with a pinch of red pepper flakes or chili powder.
Toasted walnuts, pecans, almonds, or hazelnuts can be used instead of pistachios.
For make-ahead preparation, prepare the whipped feta, chopped pistachios, and seasoned pumpkin separately. Roast the pumpkin and assemble the dish shortly before serving.
Serve with roasted chicken, grilled meats, salmon, warm pita bread, toasted crusty bread, olives, fresh vegetables, roasted chickpeas, or quinoa.
