Crispy Sweet Potato Rounds with Brie, Cranberries, Toasted Walnuts & Hot Honey

Description

Crispy Sweet Potato Rounds with Brie, Cranberries, Toasted Walnuts & Hot Honey are golden roasted sweet potato bites topped with creamy Brie, tart dried cranberries, crunchy toasted walnuts, fresh herbs, and a glossy drizzle of hot honey.


Ingredients

2 large sweet potatoes (about 650 g), scrubbed and sliced into 1/2-inch (1.2 cm) rounds

2 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp smoked paprika

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

6 oz (170 g) Brie cheese, thinly sliced

1/3 cup (45 g) dried cranberries

1/2 cup (55 g) walnuts, roughly chopped

23 tbsp hot honey

1 tbsp fresh thyme leaves

1 tbsp fresh parsley, finely chopped

1/4 tsp red pepper flakes, optional


Instructions

1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.

2. Scrub the sweet potatoes thoroughly and slice them into evenly sized rounds about 1/2 inch (1.2 cm) thick. Try to keep the slices as uniform as possible so they cook at the same rate.

3. Place the sweet potato rounds in a large bowl. Add the olive oil, garlic powder, smoked paprika, dried thyme, salt, and black pepper. Toss gently until every round is evenly coated.

4. Arrange the sweet potato rounds in a single layer on the prepared baking sheet, leaving a little space between each piece. Roast for 20–25 minutes, flipping halfway through, until the centres are tender and the edges are golden and crisp.

5. While the sweet potatoes are roasting, place the chopped walnuts in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and set aside to cool slightly.

6. Remove the roasted sweet potato rounds from the oven and place a thin slice of Brie on each round.

7. Return the baking sheet to the oven and bake for another 3–5 minutes, just until the Brie becomes soft, creamy, and slightly melted.

8. Remove the sweet potato rounds from the oven and immediately sprinkle the dried cranberries over the warm Brie. The residual heat will soften the cranberries slightly.

9. Scatter the toasted walnuts generously over each sweet potato round, distributing them evenly so every bite gets creamy Brie and crunchy nuts.

10. Drizzle the hot honey over the rounds while they’re still warm. Use more or less depending on how sweet and spicy you like your appetizers.

11. Finish with fresh thyme leaves and finely chopped parsley. Add a light sprinkle of red pepper flakes if you enjoy extra heat.

12. Serve immediately while the sweet potato rounds are warm and crisp and the Brie is soft and creamy.

Notes

Slice the sweet potatoes evenly so all the rounds cook at the same rate.

Don’t overcrowd the baking sheet. Leave space between the rounds so they roast rather than steam.

Roast at 425°F (220°C) to encourage caramelized edges and tender centres.

Flip the sweet potato rounds halfway through cooking so both sides brown evenly.

Toast the walnuts over medium-low heat and stir frequently because nuts can burn quickly.

Don’t overbake the Brie. A few minutes is enough to make it soft and creamy without completely melting it away.

Add the hot honey at the end for the best glossy finish and freshest flavour.

Fresh sweet potatoes are recommended over frozen slices because frozen potatoes generally contain more moisture and may not become as crisp.

The sweet potato rounds and toasted walnuts can be prepared ahead of time. Add the Brie, cranberries, walnuts, and hot honey shortly before serving for the best texture.

Camembert, goat cheese, or another mild soft cheese can be substituted for Brie.

Toasted pecans are an excellent substitute for walnuts.

Regular honey can be used instead of hot honey. For extra heat, combine regular honey with a small pinch of red pepper flakes.

Serve as a holiday appetizer, Thanksgiving side dish, Christmas party bite, or elegant starter.

Pair with roasted chicken, turkey, pork, a simple green salad, roasted vegetables, crackers, or fresh fruit.

Serve shortly after assembling because the sweet potato will gradually soften beneath the toppings.
