Easy Charred Corn Crostini for a Light Lunch combines crisp toasted baguette slices with creamy whipped feta, smoky charred corn, fresh herbs, and bright lemon for a simple and satisfying appetizer or light meal.
Ingredients
1 baguette, sliced into 12–14 thin pieces
2 tbsp olive oil
2 cups (300 g) fresh or frozen corn kernels
1 small garlic clove, minced
1/2 tsp smoked paprika
1/4 tsp salt
1/4 tsp black pepper
5 oz (140 g) feta cheese, crumbled
1/3 cup (80 g) Greek yogurt
1 tbsp olive oil
1 tbsp fresh lemon juice

Instructions
1. Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and lightly brush both sides with olive oil. Toast for 8–10 minutes, flipping halfway through, until crisp and lightly golden around the edges.
2. Heat a large skillet over medium-high heat. Add the corn kernels and cook for 5–7 minutes, stirring occasionally, until they develop browned and lightly charred spots.
3. During the final minute of cooking the corn, add the minced garlic, smoked paprika, salt, and black pepper. Stir well, then remove from the heat.
4. Add the feta, Greek yogurt, olive oil, lemon juice, garlic, and parsley to a food processor. Blend for 1–2 minutes until smooth, creamy, and easily spreadable.
5. Transfer the charred corn to a bowl. Stir in the fresh basil, parsley, and chives. Add a small squeeze of fresh lemon juice if desired for extra brightness.
6. Spread a generous layer of the creamy whipped feta over each toasted baguette slice, making sure the feta reaches close to the edges.
7. Spoon the warm charred corn mixture evenly over the whipped feta. Let a few kernels fall naturally around the edges for a colourful presentation.
8. Sprinkle the crostini with red pepper flakes and fresh lemon zest. For a sweet-savory finish, add a very light drizzle of honey over the top.
9. Serve immediately while the baguette is crisp, the feta is creamy, and the charred corn is still warm. Enjoy as a light lunch, appetizer, snack, or casual party dish.
Notes
Use a hot skillet so the corn develops delicious browned and charred spots instead of simply steaming.
Don’t overcrowd the skillet. Spread the corn out so moisture can escape and the kernels can brown properly.
Frozen corn works well. You don’t need to fully thaw it first, but drain away excess moisture before cooking.
If using canned corn, drain and pat the kernels dry before adding them to the skillet.
Toast the baguette slices until properly crisp. A sturdy base helps prevent the crostini from becoming soggy too quickly.
Blend the feta long enough to create a smooth and creamy spread. Add a small amount of extra Greek yogurt or water if needed for consistency.
Prepare the whipped feta several hours ahead if desired. Store it covered in the refrigerator and let it sit briefly at room temperature before assembling.
Fresh lemon zest adds bright citrus aroma without adding excess moisture.
Honey is optional. Leave it out for a more savoury flavour, or add a small drizzle for a sweet-savory contrast.
Adjust the red pepper flakes according to your preferred level of heat.
Fresh dill, cilantro, mint, or oregano can be substituted for or combined with the basil, parsley, and chives.
Assemble the crostini shortly before serving to maintain the contrast between crisp bread, creamy feta, and warm charred corn.
Serve with a simple green salad, cucumber salad, tomato salad, roasted vegetables, grilled chicken, or a bowl of soup for a heartier meal.
