Description

Crispy garlic parmesan cauliflower with caramelized golden edges and a melty parmesan crust—the ultimate easy oven-roasted vegetable side dish ready in 35 minutes!


Ingredients

1 large head cauliflower, cut into florets

3 tbsp (45 ml) olive oil

3 cloves garlic, minced

½ cup (50 g) grated Parmesan cheese

1 tsp paprika

1 tsp garlic powder

½ tsp salt

½ tsp black pepper

Fresh parsley, to garnish

Extra Parmesan, to garnish

Cracked black pepper, to garnish


Instructions

1. Preheat the oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.

2. In a large bowl, toss the cauliflower florets with olive oil, minced garlic, paprika, garlic powder, salt, and black pepper until evenly coated.

3. Spread the cauliflower in a single even layer on the baking sheet, leaving space between each floret for maximum crispiness.

4. Roast for 20–25 minutes, flipping halfway through, until the cauliflower is deeply golden with crispy caramelized edges.

5. Remove from the oven and shower the cauliflower generously with the grated parmesan cheese.

6. Return to the oven for another 3–5 minutes until the cheese is melted, lightly crispy, and starting to turn golden. For extra crispiness, broil for the last 1–2 minutes (watch closely!).

7. Transfer to a serving platter and garnish with chopped fresh parsley, an extra sprinkle of parmesan, and cracked black pepper.

8. Serve immediately while hot and crispy.

Notes

Use freshly grated parmesan from a block—pre-shredded won’t melt into a crispy crust.

Don’t crowd the pan; spread cauliflower in a single layer for maximum crispiness.

Cut uniform-sized florets so they cook evenly.

For extra crispiness, broil at the end for 60–90 seconds.

Serve immediately—the crispy edges soften as it sits.
