Feta Cheese Bites with Pistachio Crunch & Warm Blackberry Honey are a delicious sweet-and-savory appetizer featuring creamy feta wrapped in a crisp pistachio-breadcrumb coating, then served with a warm, glossy blackberry honey sauce. Ingredients
200 g feta cheese, cut into bite-sized cubes
1 large egg, beaten
1/2 cup (60 g) pistachios, finely crushed
1/4 cup (30 g) breadcrumbs
Oil, for frying
1/2 cup (75 g) fresh or frozen blackberries
3 tbsp honey
1 tbsp fresh lemon juice
1/2 tsp lemon zest
Pinch of sea salt
2 tbsp finely chopped pistachios
Fresh mint leaves
Freshly cracked black pepper
Lemon zest, optional
Instructions
1. Pat the feta cubes gently with paper towels to remove excess moisture. This helps the coating adhere properly and keeps the cheese from becoming too soft during cooking.
2. Place the beaten egg in one shallow bowl. In a second bowl, combine the crushed pistachios and breadcrumbs.
3. Dip each feta cube into the beaten egg, making sure it is fully coated. Immediately roll it in the pistachio-breadcrumb mixture, pressing gently so the crust adheres well.
4. Place the coated feta cubes on a plate and refrigerate for 10–15 minutes. This helps the coating stay in place while frying.
5. Heat about 1/2 inch of oil in a skillet over medium heat. Carefully add the feta bites and fry for 1–2 minutes per side, turning gently, until the pistachio coating is crisp and golden.
6. Transfer the crispy feta bites to a paper towel-lined plate to remove excess oil.
7. Add the blackberries, honey, lemon juice, lemon zest, and sea salt to a small saucepan. Warm over low-medium heat for 4–5 minutes, gently pressing some of the berries with the back of a spoon until the mixture becomes glossy and slightly syrupy.
8. Arrange the warm crispy feta bites on a serving platter. Spoon the warm blackberry honey around and over the bites.
9. Sprinkle with extra crushed pistachios and finish with fresh mint and a little lemon zest.
10. Serve immediately while the feta is warm and creamy inside and the pistachio coating is crisp.
Notes
Dry the feta well to remove excess moisture and help the egg and pistachio coating stick.
Refrigerate the coated feta cubes before frying so the crust holds together better during cooking.
Don’t overcrowd the skillet. Fry the bites in batches if necessary so they brown evenly.
Turn the feta bites gently because the coating is delicate while frying.
Serve immediately while the crust is crisp and the feta is warm.
Fresh or frozen blackberries can be used for the warm honey sauce.
The feta can be coated and chilled ahead of frying, but for the best texture, fry the bites shortly before serving.
Adjust the amount of honey to taste while keeping enough to create a glossy, slightly syrupy sauce.
