Ingredients
For the Flatbread
2 flatbreads or naan breads
1 tbsp olive oil
1 1/2 cups (225 g) seedless red or black grapes, halved
5 oz (140 g) soft goat cheese, crumbled
1/3 cup (40 g) walnuts, roughly chopped
1 tsp fresh thyme leaves
1/4 tsp black pepper
Pinch of salt
For the Honey Thyme Drizzle
2 tbsp honey
1 tsp fresh thyme leaves
1 tsp fresh lemon juice
Pinch of salt
For Garnishing
1 tbsp fresh thyme
1 tbsp chopped walnuts
1 tsp lemon zest
Small handful of fresh arugula, optional
Instructions
1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. Wash and dry the grapes thoroughly, then cut them in half and set them aside. Dry grapes roast better and release less excess moisture.
3. Place the flatbreads or naan breads on the prepared baking sheet. Brush the surfaces lightly with olive oil, reaching close to the edges.
4. Crumble the goat cheese evenly over both flatbreads, leaving a small border around the edges.
5. Arrange the halved grapes evenly over the goat cheese so every portion gets a good combination of grapes and cheese.
6. Scatter the chopped walnuts and fresh thyme leaves over the grapes. Season lightly with black pepper and a small pinch of salt.
7. Bake for 10–12 minutes, until the flatbread edges are crisp, the grapes are softened and slightly caramelized, and the goat cheese is warm.
8. While the flatbread bakes, gently warm the honey and thyme in a small saucepan over low heat for 1–2 minutes.
9. Remove the honey mixture from the heat and stir in the fresh lemon juice and a tiny pinch of salt.
10. Remove the flatbread from the oven and immediately drizzle the warm honey thyme mixture over the roasted grapes and goat cheese.
11. Finish with fresh thyme, chopped walnuts, and lemon zest. Add a small handful of fresh arugula if desired.
12. Cut the flatbread into wedges or squares and serve immediately while the edges are crisp, the goat cheese is warm, and the grapes are soft and caramelized.
Notes
Dry the grapes thoroughly before using them so excess moisture does not make the flatbread soggy. Soft goat cheese works best because it softens beautifully over the warm flatbread. Do not overload the flatbread; a balanced layer of toppings helps the base stay crisp. Toast the walnuts briefly before adding them for deeper flavor and extra crunch. Drizzle the honey after baking to keep it fresh and prevent it from becoming overly dark. Serve immediately for the best crisp texture. Red or black seedless grapes become especially sweet and jammy when roasted, while green grapes provide a brighter, slightly tart flavor. Brie, feta, ricotta, or Gorgonzola can be used instead of goat cheese. Brie creates a particularly creamy and mild topping. Toasted pecans are an excellent substitute for walnuts. The toppings and honey thyme drizzle can be prepared ahead of time, but assemble and bake the flatbread shortly before serving. Honey can be omitted or replaced with a small drizzle of maple syrup. Baby spinach, microgreens, or fresh basil can replace the arugula garnish. Serve as an appetizer with a cheese board, olives, nuts, fruit, or a simple green salad. For a light lunch or dinner, pair the flatbread with soup or roasted vegetables.
