Ingredients
For the Garlic Herb Lamb Chops:
8 lamb chops
2 tbsp olive oil
3 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tsp fresh thyme
Salt and black pepper, to taste
2 tbsp butter
For the Honey Garlic Chicken:
2 boneless, skinless chicken breasts
2 tbsp olive oil
3 garlic cloves, minced
3 tbsp honey
1 tbsp soy sauce
1 tsp smoked paprika
Salt and black pepper, to taste
For the Loaded Mashed Potatoes:
2 lbs (900 g) Yukon Gold potatoes, peeled and cubed
4 tbsp butter
1/2 cup milk
1 cup shredded cheddar cheese
4 slices turkey bacon, cooked and crumbled
2 green onions, sliced
Salt and black pepper, to taste
For the Roasted Vegetables:
2 medium sweet potatoes, sliced into rounds
1 lb Brussels sprouts, halved
4 slices turkey bacon, chopped
2 tbsp olive oil
1 tsp garlic powder
Salt and black pepper, to taste
Instructions
1. Preheat the oven to 425°F (220°C). Toss the sweet potatoes and Brussels sprouts with olive oil, garlic powder, salt and pepper. Scatter the chopped turkey bacon over the Brussels sprouts and roast for 30 to 35 minutes, turning halfway through.
2. Boil the potatoes in salted water for 15 to 20 minutes until fork-tender. Drain and mash with the butter and milk until smooth. Stir in the cheddar cheese and half of the turkey bacon. Season with salt and pepper, then garnish with the remaining turkey bacon and green onions.
3. Season the lamb chops with rosemary, thyme, salt and pepper. Heat the olive oil in a skillet over medium-high heat and sear for 3 to 4 minutes per side. Add the butter and garlic during the final minute, spooning the melted garlic butter over the chops.
4. Season the chicken with smoked paprika, salt and pepper. Heat the olive oil in another skillet and cook for 5 to 6 minutes per side. Add the garlic, honey and soy sauce, then cook another 2 to 3 minutes while basting until glazed.
5. Arrange the mashed potatoes, roasted vegetables, honey garlic chicken and lamb chops on serving plates. Spoon any remaining pan sauce over the meat and serve immediately.
Notes
Allow the lamb chops to rest for 5 minutes before serving.
Mash the potatoes while hot for the creamiest texture.
Roast the vegetables in a single layer for better caramelization.
Store leftovers in airtight containers in the refrigerator for up to 3 days.
Reheat gently to keep the meat juicy.
