Ingredients
For the Chicken & Vegetables:
4 boneless, skinless chicken breasts
1½ lbs (680 g) baby potatoes, halved
12 oz (340 g) fresh green beans, trimmed
3 tbsp olive oil
4 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme
½ tsp rosemary
½ tsp paprika
1 tsp salt
½ tsp black pepper
1 tbsp fresh lemon juice
1 tsp lemon zest
For Garnish:
2 tbsp fresh parsley, chopped
Lemon wedges, for serving
Instructions
Preheat the oven to 425°F (220°C). Lightly grease a large baking sheet or roasting pan.
Place the halved baby potatoes in a large bowl. Add 1½ tablespoons of olive oil, half of the minced garlic, oregano, thyme, rosemary, paprika, salt, and black pepper. Toss until evenly coated.
Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast for 20 minutes.
While the potatoes roast, rub the chicken breasts with the remaining olive oil, remaining garlic, lemon juice, lemon zest, salt, pepper, and a little extra dried herbs.
Carefully remove the baking sheet from the oven after 20 minutes. Add the seasoned chicken breasts and fresh green beans around the potatoes. Toss the green beans gently with some of the seasoning and pan juices.
Return the baking sheet to the oven and continue roasting for 20–25 minutes, or until the potatoes are tender and golden, the green beans are roasted, and the chicken reaches an internal temperature of 165°F (74°C).
Remove the roasting pan from the oven and sprinkle everything with fresh chopped parsley.
Serve the chicken with the roasted baby potatoes and green beans. Add fresh lemon wedges and spoon some of the pan juices over the chicken and vegetables before serving.
Notes
Give the potatoes a 20-minute head start so they have time to become tender and golden.
Arrange the ingredients in a single layer where possible to encourage roasting rather than steaming.
Use fresh lemon juice and zest for the brightest flavour.
Check the thickest part of the chicken with an instant-read thermometer and make sure it reaches 165°F (74°C).
Spoon the flavourful pan juices over the chicken and vegetables before serving.
