Description

Glazed Buttermilk Beignet Squares are light, fluffy homemade beignets with a tender buttermilk dough, fried until golden and finished with a sweet vanilla glaze. Perfect for breakfast, brunch, dessert or holiday treats.

Ingredients

For the Dough:

2ÂĽ cups (280 g) all-purpose flour

2 tbsp granulated sugar

2ÂĽ tsp instant yeast (1 packet)

1/2 tsp salt

3/4 cup warm buttermilk

1 large egg

2 tbsp unsalted butter, melted

1 tsp vanilla extract

For Frying:

Vegetable oil, for deep frying

For the Vanilla Glaze:

1 cup powdered sugar

2 to 3 tbsp milk

1/2 tsp vanilla extract

Instructions

1. In a large bowl, whisk together the flour, sugar, yeast and salt.

2. Add the warm buttermilk, egg, melted butter and vanilla extract. Mix until a soft dough forms.

3. Knead the dough for 8 to 10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.

4. Turn the dough onto a lightly floured surface and roll to about 1 cm (1/2 inch) thick. Cut into 5 cm (2 inch) squares.

5. Heat the vegetable oil to 350°F (175°C).

6. Fry the dough squares for 1 to 2 minutes per side until puffed and golden brown. Transfer to a wire rack or paper towels.

7. Whisk together the powdered sugar, milk and vanilla extract until smooth.

8. Dip the warm beignets into the glaze or drizzle the glaze over the top.

9. Allow the glaze to set for 1 to 2 minutes before serving.

Notes

Use warm—not hot—buttermilk so the yeast activates properly.

Keep the frying oil at 350°F (175°C) for evenly cooked beignets.

Glaze the beignets while still warm for the best coating.

These are best enjoyed fresh on the day they are made.

Store leftovers in an airtight container at room temperature for up to 2 days.
