Ingredients

1 medium zucchini (about 200 g), finely grated

2 tbsp brown sugar

1/2 tsp ground cinnamon

1/4 tsp vanilla extract

1 tbsp butter

Pinch of salt

8 slices brioche or soft white bread

4 oz (115 g) cream cheese, softened

1/2 cup (60 g) shredded mozzarella cheese

1/2 cup (60 g) shredded mild cheddar cheese

2 tbsp honey

1/4 tsp ground cinnamon

2 tbsp butter, softened

2 tbsp powdered sugar

1 tbsp honey

2 tbsp chopped walnuts or pecans

Fresh berries, optional


Instructions

1. Finely grate the zucchini and place it in a clean kitchen towel or several layers of paper towels. Squeeze firmly to remove as much excess moisture as possible.

2. Melt 1 tbsp butter in a skillet over medium heat. Add the grated zucchini, brown sugar, cinnamon, vanilla, and salt. Cook for 4–6 minutes, stirring occasionally, until the zucchini is soft, fragrant, and lightly caramelized. Remove from the heat and let it cool slightly.

3. In a small bowl, combine the softened cream cheese, honey, and cinnamon. Mix until completely smooth and creamy.

4. Spread the cream cheese mixture evenly over four slices of bread. Add a layer of the caramelized zucchini, then sprinkle the mozzarella and cheddar evenly over the top. Place the remaining bread slices on top and gently press the sandwiches together.

5. Spread the softened butter evenly over the outside of each sandwich, making sure the bread is lightly coated from edge to edge.

6. Heat a skillet over medium-low heat. Place the sandwiches in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and crisp and the cheeses are completely melted and gooey.

7. If the bread starts browning too quickly before the cheese melts, reduce the heat to low and cover the skillet for 1–2 minutes. The trapped heat will help melt the cheese without burning the bread.

8. Transfer the hot sandwiches to a cutting board. Drizzle a small amount of honey over each sandwich and sprinkle with chopped walnuts or pecans.

9. Dust the sandwiches lightly with powdered sugar for a sweet dessert-style finish.

10. Slice each sandwich in half and serve immediately while the cheese is warm and gooey and the caramelized zucchini filling is soft and sweet. Add fresh berries on the side if desired.

Notes

Squeeze the zucchini very well before cooking. Removing excess moisture keeps the filling thick and helps prevent soggy bread.

Don’t overcook the zucchini. Cook it until tender and lightly caramelized rather than completely dry.

Use softened cream cheese so the filling spreads easily and evenly.

Cook the sandwiches over medium-low heat. This gives the cheese enough time to melt before the bread becomes too dark.

Don’t overload the sandwiches. A moderate amount of filling helps them stay together while grilling.

Serve immediately while the cheese is warm, stretchy, and gooey.

Brioche gives the sandwiches a richer and slightly sweeter flavour, while soft white bread creates a more classic grilled cheese texture.

Monterey Jack, Gouda, Havarti, or mild provolone can replace some or all of the mozzarella or cheddar. Choose cheeses that melt smoothly.

The caramelized zucchini can be prepared ahead of time and refrigerated in an airtight container. Bring it closer to room temperature before assembling.

For a less sweet version, reduce the brown sugar or honey, or skip the powdered sugar.

If the bread browns before the cheese melts, lower the heat and cover the skillet briefly to help the centre melt.

Serve with fresh strawberries, blueberries, raspberries, or blackberries. For an extra-special dessert, pair with vanilla ice cream or lightly sweetened whipped cream.
