Description

This Greek Chicken Mezze Platter with Balsamic Drizzle features juicy grilled Greek chicken, creamy hummus, cool tzatziki, fresh vegetables, feta cheese, warm pita bread, and a sweet tangy balsamic drizzle. It’s a colorful Mediterranean meal that’s perfect for entertaining, family dinners, or healthy meal prep.


Ingredients

500 g boneless skinless chicken breasts or thighs

2 tbsp extra virgin olive oil

2 tbsp fresh lemon juice

3 cloves garlic, minced

1 tsp dried oregano

1 tsp smoked paprika

½ tsp ground cumin

½ tsp onion powder

Salt and freshly ground black pepper

1 cup hummus

1 cup tzatziki

200 g feta cheese, cubed

1 cup cherry tomatoes, halved

2 Persian cucumbers, sliced

½ red onion, thinly sliced

½ cup Kalamata olives

1 cup roasted red peppers, sliced

4 warm pita breads, cut into wedges

3 tbsp balsamic glaze

1 tbsp extra virgin olive oil

1 tsp honey

1 tsp fresh lemon juice

½ tsp dried oregano

Fresh parsley, chopped

Fresh dill, chopped

Optional: stuffed grape leaves, pepperoncini peppers, toasted pine nuts, microgreens, lemon wedges


Instructions

1. In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, smoked paprika, cumin, onion powder, salt, and black pepper.

2. Add the chicken and toss well to coat. Marinate for at least 30 minutes.

3. Heat a grill pan or skillet over medium-high heat and cook the chicken for 5 to 6 minutes per side until it reaches an internal temperature of 74°C (165°F).

4. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips.

5. In a small bowl, whisk together the balsamic glaze, olive oil, honey, lemon juice, and oregano until smooth.

6. Arrange the hummus and tzatziki on a large serving platter.

7. Add the sliced chicken, feta cheese, cherry tomatoes, cucumbers, red onion, Kalamata olives, roasted red peppers, and warm pita wedges.

8. Drizzle the balsamic mixture over the chicken and vegetables.

9. Garnish with fresh parsley, dill, and any optional toppings before serving.

Notes

Marinate the chicken longer for even more flavor.

Always let the chicken rest before slicing to keep it juicy.

Warm the pita bread just before serving for the best texture.

Assemble the platter right before serving to keep the vegetables fresh and crisp.

Store leftover chicken separately in the refrigerator for up to 4 days.
