Description
Greek-Inspired Bell Pepper Bites are a fresh and creamy appetiser made with crisp bell peppers, Greek yogurt, tangy feta, cucumber, dill and lemon. These colourful little bites are simple to prepare and make a lovely light snack, appetiser or side dish for a Mediterranean-inspired meal.
Ingredients
2 large bell peppers, halved and seeded
1 cup plain Greek yogurt
1/3 cup crumbled feta cheese
1 small cucumber, finely diced
2 tbsp fresh dill, chopped
1 tbsp fresh lemon juice
1 tsp olive oil
1/2 tsp garlic powder
Freshly ground black pepper, to taste
Instructions
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
2. Cut the bell peppers into small bite-sized boats or thick rings. Arrange the pepper pieces on the prepared baking sheet.
3. In a bowl, combine the Greek yogurt, crumbled feta, finely diced cucumber, chopped fresh dill, lemon juice, olive oil, garlic powder and freshly ground black pepper. Stir until the mixture is creamy and evenly combined.
4. Spoon the creamy Greek-inspired mixture generously into each prepared pepper piece. Distribute the filling evenly so every bite has plenty of the creamy mixture.
5. Place the filled peppers in the preheated oven and bake for 10–12 minutes, just until the peppers soften slightly and the filling is warmed through.
6. Serve the bell pepper bites warm, or allow them to cool and enjoy them chilled. Garnish with a little extra fresh dill and freshly cracked black pepper if desired.
Notes
Choose large bell peppers because they make it easier to create sturdy little boats for the filling.
Dice the cucumber finely so it distributes evenly through the creamy filling.
Don’t overbake the peppers. They only need to soften slightly while the filling warms through.
These bites can be enjoyed warm or cooled and served chilled.
Finish with fresh dill and cracked black pepper for a simple fresh garnish.
The filling can be mixed ahead of time and kept chilled until you’re ready to fill the peppers.
Serve as an appetiser, snack or light side dish alongside other Mediterranean-inspired dishes.
