Description

Healthy Beetroot Stack with Creamy Goat Cheese & Walnut Crunch combines earthy beetroot, creamy tangy goat cheese, crunchy honey-glazed walnuts, and a bright balsamic lemon dressing, finished with fresh dill, peppery arugula, pomegranate seeds, and lemon zest.


Ingredients

4 medium beets (about 500 g), cooked, peeled, and sliced into rounds

5 oz (140 g) soft goat cheese

1/3 cup (80 g) Greek yogurt

1 tbsp fresh lemon juice

1 tsp honey

1 small garlic clove, minced

1/4 tsp salt

1/4 tsp black pepper

1/2 cup (60 g) walnuts, roughly chopped

1 tbsp honey

1/2 tsp dried thyme

Pinch of salt

2 tbsp extra-virgin olive oil

1 tbsp fresh lemon juice

1 tbsp balsamic vinegar

1 tsp honey

1/2 tsp Dijon mustard

Pinch of salt

1/4 tsp black pepper

2 tbsp fresh arugula or baby greens

1 tbsp fresh dill, chopped

1 tbsp pomegranate seeds

1 tsp lemon zest


Instructions

1. Cook the beets until fork-tender, then allow them to cool completely. Peel away the skins and slice the beets into even rounds about 1/4 inch (6 mm) thick. Gently pat the slices with paper towels to remove excess moisture.

2. Add the goat cheese, Greek yogurt, lemon juice, honey, minced garlic, salt, and black pepper to a food processor. Blend until smooth and creamy. If the mixture is too thick, add a teaspoon of water and blend again until it reaches a soft, spreadable consistency.

3. Heat a dry skillet over medium-low heat. Add the chopped walnuts and toast for 3–4 minutes, stirring frequently until fragrant and lightly golden.

4. Add the honey, dried thyme, and a pinch of salt to the toasted walnuts. Stir for another 1–2 minutes, until the walnuts are glossy and lightly caramelized. Transfer them to a sheet of parchment paper and let them cool completely.

5. In a small bowl, whisk together the extra-virgin olive oil, lemon juice, balsamic vinegar, honey, Dijon mustard, salt, and black pepper until smooth and emulsified.

6. Place one beet round in the centre of each serving plate. Spoon a small amount of the creamy goat cheese mixture over the beet and gently spread it toward the edges.

7. Add another beet slice followed by another layer of goat cheese cream. Continue layering until you have a neat, attractive stack. Finish with a final beet slice and a small spoonful of goat cheese cream on top.

8. Sprinkle the honey-thyme walnut crunch generously over and around each beetroot stack. Keep some larger walnut pieces intact for extra texture.

9. Drizzle the balsamic lemon dressing lightly around the beetroot stacks and over the top. Avoid adding too much dressing at once so the stacks remain neat.

10. Finish each stack with fresh arugula or baby greens, chopped dill, vibrant pomegranate seeds, and a little lemon zest.

11. Serve immediately, or refrigerate for 15–20 minutes before serving. These beetroot stacks are delicious chilled or slightly cool and make an elegant vegetarian appetizer, light lunch, or colourful side dish.

Notes

Use evenly sliced beets. Similar-sized slices make the stacks easier to build and give them a more polished appearance.

Gently pat the beet slices dry before assembling. Removing excess moisture helps prevent the goat cheese cream from sliding between the layers.

Don’t overcook the walnuts. Honey can burn quickly, so keep the heat low while caramelizing them.

Let the walnut crunch cool completely. The coating becomes firmer as the walnuts cool, giving you a better crunch.

Use fresh lemon juice for the brightest flavour in both the goat cheese cream and dressing.

Build the stacks shortly before serving for the neatest presentation.

Pre-cooked vacuum-packed or refrigerated beets can be used for convenience. Make sure they are well drained and gently patted dry before slicing.

You can prepare the beets, goat cheese cream, walnut crunch, and dressing ahead of time, then assemble the stacks shortly before serving.

Soft feta or whipped ricotta can be used instead of goat cheese. Goat cheese provides the strongest tangy contrast, while both alternatives pair well with beets and walnuts.

Pecans are an excellent substitute for walnuts and become wonderfully crunchy when lightly toasted and glazed with honey.

To keep the stacks stable, use relatively flat beet slices and avoid spreading too much goat cheese between the layers.

For a less sweet walnut topping, simply toast the walnuts with thyme and a pinch of salt. Maple syrup can also replace the honey.

Serve as an elegant starter with grilled chicken, roasted fish, crusty bread, a simple green salad, or roasted vegetables. For a more substantial vegetarian lunch, pair with quinoa, lentils, chickpeas, or a grain salad.
