Healthy Citrus Beet & Avocado Dinner Salad is a vibrant and nourishing salad featuring earthy roasted beets, creamy avocado, juicy orange segments, crisp greens, toasted walnuts, pumpkin seeds, and a bright citrus dressing made with fresh orange juice, lemon, honey, and Dijon mustard.
Ingredients
4 medium beets (about 500 g), cooked, peeled, and sliced
2 ripe avocados, sliced
2 large oranges, peeled and cut into segments
4 cups (120 g) mixed greens or baby spinach
1/2 small red onion, thinly sliced
1/3 cup (40 g) walnuts, toasted and roughly chopped
1/4 cup (35 g) pumpkin seeds
1/4 cup (15 g) fresh parsley, chopped
3 tbsp extra-virgin olive oil
2 tbsp fresh orange juice
1 tbsp fresh lemon juice
1 tsp honey
1 tsp Dijon mustard
1/2 tsp apple cider vinegar
1/4 tsp salt
1/4 tsp black pepper
1 tbsp fresh orange zest
1 tbsp fresh mint leaves
1 tbsp pomegranate seeds, optional
Instructions
1. If using raw beets, wrap them individually in foil and roast at 400°F (200°C) for 45–60 minutes, depending on their size, until fork-tender. Let them cool enough to handle, then peel and slice them into wedges or rounds.
2. Place the walnuts in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and let them cool before roughly chopping if needed.
3. Peel the oranges and carefully separate them into segments. Remove any seeds and excess white pith for a cleaner texture in the finished salad.
4. Slice the avocados shortly before assembling the salad. Drizzle them lightly with fresh lemon juice to help maintain their fresh colour and add a subtle citrus flavour.
5. In a small bowl or jar, whisk together the extra-virgin olive oil, orange juice, lemon juice, honey, Dijon mustard, apple cider vinegar, salt, and black pepper until smooth and emulsified.
6. Arrange the mixed greens or baby spinach on a large serving platter, or divide them among four individual plates. Add the roasted beets, orange segments, avocado slices, and thinly sliced red onion.
7. Sprinkle the toasted walnuts and pumpkin seeds evenly over the salad, distributing them across the top so every serving gets plenty of crunch.
8. Drizzle the citrus dressing over the salad just before serving. Start with a moderate amount and add more according to taste.
9. Finish with fresh chopped parsley, orange zest, and fresh mint leaves. If desired, scatter pomegranate seeds over the top for extra colour and a sweet-tart flavour.
10. Serve immediately while the greens are crisp, the avocado is creamy, and the citrus is fresh and juicy. For a more substantial dinner, add grilled chicken, salmon, chickpeas, or cooked quinoa.
Notes
Cook the beets until a fork slides easily into the centre before peeling and slicing.
Use ripe but firm avocados so they remain creamy while still holding their shape when sliced.
Choose juicy, sweet oranges for the best contrast with the earthy beets.
Toast the walnuts for a few minutes in a dry skillet to make them more aromatic and crunchy.
Add the avocado shortly before serving to keep the slices intact and fresh-looking.
Dress the salad just before serving so the greens remain crisp and don’t become soggy.
Don’t overdress the salad. Start with a moderate amount of citrus dressing and add more if needed.
Pre-cooked or vacuum-packed refrigerated beets can be used to save preparation time. Simply slice them and add them directly to the salad.
Keep the salad components separate if preparing ahead. Prepare the beets, dressing, oranges, walnuts, and greens in advance, then slice the avocado and assemble shortly before serving.
Grapefruit, blood oranges, mandarins, or a combination of citrus fruits can be substituted for the oranges.
Pecans, almonds, pistachios, or hazelnuts can be used instead of walnuts. Toast them lightly before adding for the best flavour.
For a more filling dinner, add grilled chicken, salmon, chickpeas, quinoa, lentils, or another favourite protein.
To slow avocado browning, slice it shortly before serving and brush or toss it lightly with fresh lemon juice.
Serve as a light dinner, colourful lunch, or side dish alongside grilled chicken, baked salmon, roasted shrimp, or other simple proteins.
For a vegetarian meal, pair with chickpeas, quinoa, lentils, or crusty whole-grain bread.
