Healthy Mediterranean Chicken Lemon Rice Bowl is a fresh, colourful, and satisfying meal featuring tender lemon-marinated chicken, fluffy citrus-infused rice, crisp cucumber, juicy cherry tomatoes, Kalamata olives, creamy feta, and a refreshing lemon yogurt sauce.
Ingredients
1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
1 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1 1/2 cups (300 g) long-grain white or basmati rice
2 1/2 cups (600 ml) chicken broth
1 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp lemon zest
1/2 tsp salt
1 cup (150 g) cucumber, diced
1 cup (150 g) cherry tomatoes, halved
1/2 cup (75 g) Kalamata olives, pitted
1/3 cup (50 g) crumbled feta cheese
1/4 small red onion, thinly sliced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1/2 cup (120 g) Greek yogurt
1 tbsp fresh lemon juice
1 tsp honey
1 small garlic clove, minced
1 tbsp olive oil
1–2 tbsp water, as needed

Instructions
1. Place the chicken pieces in a medium bowl. Add the olive oil, lemon juice, lemon zest, garlic, oregano, smoked paprika, cumin, salt, and black pepper. Toss thoroughly until the chicken is evenly coated. Let it marinate for 15–20 minutes while you prepare the other ingredients.
2. Rinse the rice under cold water until the water runs mostly clear. Add the rice, chicken broth, olive oil, lemon juice, lemon zest, and salt to a saucepan. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15–18 minutes, or until the liquid has been absorbed and the rice is tender. Remove from the heat and let it rest, covered, for 5 minutes. Fluff gently with a fork.
3. Heat a large skillet over medium-high heat. Add the marinated chicken pieces and cook for 6–8 minutes, turning occasionally, until golden brown on the outside and cooked through. The chicken should reach an internal temperature of 165°F (74°C) in the centre. Remove from the heat and let it rest briefly.
4. In a small bowl, whisk together the Greek yogurt, lemon juice, honey, garlic, olive oil, and salt. Add water gradually, 1 tablespoon at a time, until the sauce becomes smooth and easy to drizzle.
5. Add the diced cucumber, halved cherry tomatoes, sliced red onion, Kalamata olives, parsley, and dill to a bowl. Toss gently until the vegetables and herbs are evenly combined.
6. Divide the warm lemon rice evenly among four serving bowls. Arrange the cooked lemon chicken on one side of each bowl and spoon the fresh cucumber and tomato mixture alongside it.
7. Scatter the crumbled feta evenly over the bowls. The salty, creamy feta adds a delicious contrast to the fresh vegetables and warmly seasoned chicken.
8. Spoon the creamy lemon yogurt sauce over the chicken and rice. Alternatively, serve the sauce on the side so everyone can add as much as they like.
9. Finish each bowl with fresh parsley, dill, a little extra lemon zest, and a small squeeze of fresh lemon juice for an extra bright finish.
10. Serve immediately while the lemon rice and chicken are warm and the Mediterranean vegetables are fresh and crisp.
Notes
Don’t skip the chicken marinade. Even 15–20 minutes gives the chicken extra flavour and helps keep it juicy.
Use fresh lemon juice and zest for a brighter Mediterranean flavour.
Rinse the rice under cold water until the water runs mostly clear. This removes excess surface starch and helps produce fluffy, separate grains.
Don’t overcrowd the skillet when cooking the chicken. Cook in batches if necessary so the pieces brown rather than steam.
Keep the cucumber and tomatoes fresh by adding them shortly before serving.
Adjust the yogurt sauce with more or less water depending on whether you prefer a thin drizzle or thicker dipping sauce.
Finish the bowls with fresh lemon juice just before serving to brighten all the flavours.
Boneless, skinless chicken thighs can be substituted for chicken breasts. Cook them until they reach an internal temperature of 165°F (74°C).
Brown rice can replace white or basmati rice. Adjust the cooking time and liquid according to the package directions.
The honey can be omitted from the yogurt sauce for a more tangy flavour, or replaced with a small amount of maple syrup.
Additional toppings such as avocado, hummus, roasted chickpeas, pickled red onions, artichoke hearts, roasted peppers, or extra fresh herbs work beautifully.
For meal prep, store the cooked chicken and rice separately from the fresh vegetables, feta, and yogurt sauce. Assemble the bowls just before serving so the vegetables remain crisp.
Store cooked chicken and rice in airtight containers in the refrigerator and use within a few days. Keep the fresh vegetables and yogurt sauce refrigerated separately for the best texture and flavour.
Serve with warm pita bread, hummus, roasted vegetables, or a simple Greek salad for a larger Mediterranean-inspired meal.
