Description

Healthy Roasted Vegetable Terrine with Whipped Feta is a colourful Mediterranean-inspired dish made with layers of tender roasted zucchini, sweet red peppers, eggplant, carrots, and red onion. Creamy whipped feta and a bright lemon-herb dressing create an elegant vegetarian terrine that’s perfect for entertaining, brunch, holiday tables, or a light summer meal.


Ingredients

2 medium zucchini (about 400 g), thinly sliced lengthwise

2 red bell peppers, seeded and cut into wide strips

1 large eggplant (about 400 g), thinly sliced

2 medium carrots (about 200 g), thinly sliced lengthwise

1 small red onion, thinly sliced

2 tbsp olive oil

1 tsp dried oregano

1/2 tsp garlic powder

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

6 oz (170 g) feta cheese, crumbled

1/3 cup (80 g) Greek yogurt

1 tbsp extra-virgin olive oil

1 tbsp fresh lemon juice

1 small garlic clove, minced

12 tbsp water, as needed

2 tbsp extra-virgin olive oil

1 tbsp fresh lemon juice

1 tsp balsamic vinegar

1 tsp honey

1 tbsp fresh parsley, chopped

1 tbsp fresh basil, chopped

1/4 tsp salt

1/4 tsp black pepper

2 tbsp pomegranate seeds

1 tbsp toasted pumpkin seeds

Fresh basil leaves

Fresh parsley

Lemon zest


Instructions

1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper. Using two sheets helps keep the vegetables from becoming overcrowded while roasting.

2. Arrange the zucchini, bell peppers, eggplant, carrots, and red onion on the prepared baking sheets. Drizzle with olive oil and sprinkle with oregano, garlic powder, dried thyme, salt, and black pepper. Toss gently until the vegetables are evenly coated.

3. Roast the vegetables for 25–35 minutes, turning them halfway through cooking, until tender and lightly caramelized around the edges. Some vegetables may finish slightly earlier than others, so remove them as soon as they are tender. Let everything cool slightly before assembling the terrine.

4. Add the feta, Greek yogurt, olive oil, lemon juice, and minced garlic to a food processor. Blend for 1–2 minutes until smooth and creamy. Add water, 1 tablespoon at a time, until the mixture reaches a soft, spreadable consistency.

5. In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, honey, parsley, basil, salt, and black pepper until well combined. Set aside a portion for finishing the terrine.

6. Line a loaf pan with parchment paper, leaving enough overhang on the sides to cover the top later. The parchment will make it easier to lift the chilled terrine from the pan without disturbing the layers.

7. Place a layer of roasted zucchini across the bottom of the loaf pan, slightly overlapping the slices. Spread a thin, even layer of whipped feta over the zucchini.

8. Add layers of roasted bell peppers, eggplant, carrots, and red onion, spreading a little whipped feta between the vegetable layers. Press each layer gently with the back of a spoon or spatula to create a compact, even terrine.

9. Lightly drizzle small amounts of the herb dressing between a few of the vegetable layers. Avoid adding too much dressing inside the terrine, as excess liquid can make the layers difficult to slice.

10. Continue layering until all the roasted vegetables and whipped feta have been used. Finish with a neat layer of roasted zucchini on top.

11. Fold the parchment paper over the top of the terrine and gently press down to compact the layers. Refrigerate for at least 2 hours, or preferably overnight, to allow the terrine to become firm and easy to slice.

12. Carefully lift the chilled terrine from the loaf pan using the parchment overhang. Transfer it to a serving board or platter and gently peel away the parchment paper.

13. Drizzle the remaining herb dressing over the top of the terrine. Sprinkle with pomegranate seeds and toasted pumpkin seeds, then finish with fresh basil, parsley, and a little lemon zest.

14. Using a sharp knife, cut the terrine into thick slices. Serve chilled or let it sit at room temperature for 10–15 minutes before serving for a slightly softer texture and fuller flavour.

Notes

Roast the vegetables instead of steaming them. Roasting removes excess moisture and gives the vegetables deeper flavour and lightly caramelized edges.

Don’t overcrowd the baking sheets. Spread the vegetables out so they roast and caramelize rather than steam.

Let the roasted vegetables cool slightly before assembling so the whipped feta stays creamy and the layers remain distinct.

Press each vegetable layer gently as you assemble the terrine. Compact layers help the finished terrine hold its shape when sliced.

Chill the terrine overnight when possible. A longer chilling time allows the layers to become firmer and easier to cut.

Use the herb dressing sparingly between selected layers. Too much dressing can introduce excess liquid and make the terrine watery.

Use a sharp knife to create cleaner slices while keeping the colourful vegetable layers intact.

You can prepare the terrine ahead of time. It needs at least 2 hours in the refrigerator to set, while overnight chilling gives the best structure.

Excess moisture from the vegetables is usually the main reason a vegetable terrine becomes watery. Roast the vegetables until tender and lightly caramelized and avoid overcrowding the pans.

Roasted yellow squash, mushrooms, spinach, or thinly sliced tomatoes can be substituted for some of the vegetables. Choose vegetables that can roast until tender without releasing too much excess liquid.

Soft goat cheese can be substituted for feta. Blend it with the Greek yogurt in the same way for a slightly milder, creamier flavour.

Keep the finished terrine covered and refrigerated and enjoy it within a few days. For the best texture and appearance, slice only the portions you plan to serve.

Serve chilled or let the terrine sit at room temperature for 10–15 minutes before serving. This slightly softens the whipped feta and brings out the flavours.

Serve with crusty bread, toasted baguette slices, a simple green salad, Mediterranean-style dips, olives, couscous, quinoa, grilled chicken, or roasted fish.
