Honey-Glazed Acorn Squash with Burrata & Cranberry Drizzle is an elegant seasonal dish featuring tender caramelized acorn squash, creamy burrata, toasted pecans, dried cranberries, fresh pomegranate seeds, and a warm cranberry-honey drizzle.
Ingredients
2 medium acorn squash (about 900 g total), halved and seeds removed
2 tbsp olive oil
2 tbsp honey
1/2 tsp cinnamon
1/2 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/3 cup (80 g) cranberry sauce
1 tbsp honey
1 tbsp fresh orange juice
1 tsp balsamic vinegar
1/2 tsp Dijon mustard
8 oz (225 g) burrata cheese
1/3 cup (40 g) pecans, roughly chopped
2 tbsp dried cranberries
2 tbsp fresh pomegranate seeds
1 tbsp fresh thyme leaves
1 tbsp fresh parsley, chopped
Instructions
1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
2. Cut the acorn squash in half lengthwise and carefully scoop out the seeds and stringy center. Place the squash halves cut-side up on the prepared baking sheet.
3. In a small bowl, whisk together the olive oil, honey, cinnamon, dried thyme, garlic powder, salt, and black pepper until well combined.
4. Brush the honey mixture generously over the cut surfaces of the squash, making sure the flesh and edges are evenly coated. Reserve any remaining mixture for another light brushing during roasting if desired.
5. Turn the squash halves cut-side down and roast for 30–35 minutes. Carefully flip them cut-side up and continue roasting for another 10–15 minutes, until the squash is fork-tender and deeply caramelized around the edges.
6. While the squash roasts, combine the cranberry sauce, honey, orange juice, balsamic vinegar, and Dijon mustard in a small saucepan. Warm over low heat for 3–5 minutes, stirring occasionally, until smooth, glossy, and slightly warmed through. Remove from the heat.
7. Place the chopped pecans in a dry skillet over medium-low heat. Toast for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and let them cool slightly.
8. Transfer the roasted acorn squash to a large serving platter. Tear the burrata into generous pieces and arrange it over and around the warm squash, allowing the creamy center to spread naturally.
9. Scatter the toasted pecans and dried cranberries over the burrata and roasted squash. Distribute them evenly so each serving gets a combination of creamy, crunchy, and chewy textures.
10. Spoon the warm cranberry drizzle generously over the squash and burrata, allowing the sweet-tart sauce to run into the creamy cheese and across the caramelized squash.
11. Finish with fresh pomegranate seeds, thyme leaves, and chopped parsley. The pomegranate adds a bright burst of colour and a refreshing contrast to the rich burrata.
12. Serve warm or slightly cooled as an elegant vegetarian appetizer, festive side dish, or beautiful holiday centerpiece. Spoon some of the creamy burrata, roasted squash, crunchy pecans, and cranberry drizzle onto each plate.

Choose acorn squash that feels heavy for its size and has firm, unblemished skin.
Don’t overcrowd the baking sheet. Give the squash enough room so it roasts and caramelizes rather than steaming.
Watch the honey during the final roasting stage because it can brown quickly.

Butternut squash can be substituted for acorn squash. Cut it into thick wedges or bite-sized cubes and roast until tender and caramelized.
Fresh mozzarella, whipped ricotta, goat cheese, or feta can be used instead of burrata. Burrata provides the creamiest and richest result.
For a fresh cranberry topping, simmer fresh or frozen cranberries with honey, orange juice, and a little balsamic vinegar until the berries soften and the mixture becomes glossy.
