  • Author: vitalityrecipes
  • Total Time: 1 hour

Description

Tender roasted acorn squash is glazed with honey and warm spices, then filled with creamy whipped goat cheese and finished with a glossy cranberry drizzle, toasted pecans, dried cranberries, fresh herbs, and optional pomegranate seeds. A beautiful festive side dish or vegetarian main course.

Ingredients

For the Honey-Glazed Acorn Squash

2 medium acorn squash (about 900 g), halved and seeds removed

2 tbsp olive oil

2 tbsp honey

1/2 tsp cinnamon

1/2 tsp smoked paprika

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp black pepper

For the Creamy Goat Cheese

5 oz (140 g) soft goat cheese

1/3 cup (80 g) Greek yogurt

1 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp honey

1–2 tbsp water, as needed

For the Cranberry Drizzle

1/3 cup (80 g) cranberry sauce

1 tbsp honey

1 tbsp fresh orange juice

1 tsp balsamic vinegar

1/2 tsp Dijon mustard

For Garnishing

1/3 cup (40 g) pecans, toasted and roughly chopped

2 tbsp dried cranberries

1 tbsp fresh parsley, chopped

1 tsp fresh thyme leaves

1 tbsp pomegranate seeds, optional

Instructions

1. Preheat the oven to 400°F (200°C). Carefully cut the acorn squash in half lengthwise and scoop out the seeds and stringy center.

2. Brush the cut sides of the squash with olive oil. Sprinkle evenly with cinnamon, smoked paprika, dried thyme, salt, and black pepper. Drizzle the honey over the squash.

3. Arrange the squash halves cut-side down on a parchment-lined baking sheet. Roast for 35–45 minutes, depending on size, until the flesh is completely tender and the edges are deeply caramelized.

4. While the squash roasts, make the creamy goat cheese. Add the goat cheese, Greek yogurt, olive oil, lemon juice, and honey to a food processor and blend until smooth and creamy.

5. Add 1–2 tablespoons of water, a little at a time, if needed to create a soft, spreadable consistency.

6. Prepare the cranberry drizzle by combining the cranberry sauce, honey, orange juice, balsamic vinegar, and Dijon mustard in a small saucepan.

7. Warm the cranberry mixture over low heat for 3–5 minutes, stirring occasionally, until smooth, glossy, and slightly loosened. Remove from the heat.

8. Toast the chopped pecans in a dry skillet over medium-low heat for 3–4 minutes, stirring frequently, until fragrant and lightly golden. Remove from the heat and let cool slightly.

9. Arrange the roasted acorn squash halves on a large serving platter. Spoon a generous amount of creamy goat cheese into the center of each squash half, keeping the caramelized edges visible.

10. Drizzle the warm cranberry mixture over the creamy goat cheese and roasted squash, allowing some of the sauce to run naturally down the sides.

11. Scatter the toasted pecans and dried cranberries evenly over the squash and goat cheese.

12. Finish with fresh parsley and thyme leaves. Add pomegranate seeds if desired for a bright, festive touch.

13. Serve warm or slightly cooled, spooning the creamy goat cheese and cranberry topping together with the tender roasted squash so each bite combines sweet, savory, creamy, and crunchy flavors.

Notes

Choose evenly sized acorn squash halves so they roast at roughly the same rate. Deep caramelization around the edges adds much of the dish’s flavor, so allow the squash to roast until tender and deeply golden. Use softened goat cheese so it blends easily into a smooth and creamy consistency. Toast the pecans in a dry skillet for a few minutes to make them more fragrant and crunchy. Warm the cranberry drizzle gently over low heat to keep it smooth without making it overly thick. Keep the caramelized squash edges visible when adding the goat cheese for the best presentation. Add the pecans, cranberries, and fresh herbs shortly before serving to keep the toppings crunchy and fresh. The squash can be roasted ahead of time and gently reheated before serving. Prepare the goat cheese and cranberry drizzle separately, then assemble shortly before serving. Butternut squash can be substituted for acorn squash. Cut it into large wedges or cubes and adjust the roasting time according to the size of the pieces. Whipped feta or ricotta can be substituted for goat cheese. Feta provides a saltier flavor, while ricotta creates a milder filling. If using fresh cranberries instead of cranberry sauce, cook them first with a little water and sweetener until softened. Toasted walnuts can be substituted for pecans. Store leftovers in an airtight container in the refrigerator and enjoy within a few days. Keep the toppings and sauces separate when possible and reheat the squash gently. Serve as a vegetarian main course with a green salad, roasted vegetables, or crusty artisan bread. For a holiday side dish, serve alongside roasted turkey, chicken, pork, glazed ham, wild rice, quinoa, or herbed couscous.
