Honey Lime Chicken & Avocado Rice Stack is a fresh, colourful and satisfying meal made with juicy honey-lime chicken, zesty seasoned rice and creamy avocado. Layered into a neat stack and finished with fresh cilantro, lime zest and chilli flakes, this easy recipe is perfect for a light lunch or flavour-packed dinner.
Ingredients
1 lb (450 g) chicken breast, diced
2 tablespoons (30 ml) olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh lime juice
1 tablespoon honey
2 garlic cloves, minced
1/2 teaspoon chilli flakes, optional
2 cups cooked jasmine or basmati rice
1 tablespoon fresh lime juice
1 tablespoon fresh cilantro, chopped
1 teaspoon olive oil
Pinch of salt
2 ripe avocados, diced
1 tablespoon fresh lime juice
1 tablespoon red onion, finely diced
1 tablespoon fresh cilantro, chopped
Pinch of salt and black pepper

Instructions
1. Place the diced chicken in a bowl. Add the olive oil, lime juice, honey, minced garlic, salt, black pepper and chilli flakes if using. Toss well until the chicken is evenly coated. Let it sit for 10–15 minutes.
2. Add the cooked jasmine or basmati rice to a bowl. Gently mix in the lime juice, chopped cilantro, olive oil and a pinch of salt. Stir carefully so the rice remains fluffy.
3. In a separate bowl, combine the diced avocado, lime juice, finely diced red onion, cilantro, salt and black pepper. Mix gently to keep the avocado pieces intact rather than turning them into a mash.
4. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 6–8 minutes, stirring occasionally, until golden and cooked through.
5. Place a round food ring or mould on each serving plate. Add a layer of the seasoned rice and gently press it down to create an even base. Add the avocado mixture and press lightly to help it hold its shape. Finish with a generous layer of the warm honey-lime chicken.
6. Carefully lift the food ring straight upwards to reveal the layered stack. Repeat with the remaining ingredients and plates.
7. Garnish each stack with fresh cilantro, lime zest and a sprinkle of chilli flakes if desired. Serve immediately with fresh lime wedges.
Notes
Cut the chicken into similar-sized pieces so they cook evenly and stay tender.
Gently mix the avocado to keep the pieces intact and give the finished stack better texture.
Warm cooked rice is easier to press into the mould and helps the layers hold together.
Press each layer gently, using enough pressure to create structure without turning the avocado into a mash.
Lift the mould straight upwards rather than twisting it to keep the layers neat.
Leave out the chilli flakes for a milder version or add more for extra heat.
Another cooked rice can be used instead of jasmine or basmati, although the texture may vary.
Prepare the avocado layer close to serving so it remains fresh.
A round food ring or mould makes the presentation easier, but the ingredients can also be layered directly onto a plate or in a small bowl.
Boneless chicken thighs can be used instead of chicken breast. Adjust the cooking time according to the size of the pieces and cook until fully cooked through.
Serve with a fresh green salad, sliced cucumber, roasted vegetables or extra lime wedges.
