Ingredients
500 g chicken breast, cubed
2 tbsp olive oil
2 tbsp honey (for chicken)
2 tbsp lime juice (for chicken)
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp paprika
2 cups cooked rice
1 tbsp butter
½ tsp salt (for rice)
1 tbsp lime juice (for rice)
2 tbsp chopped cilantro
1 ripe avocado, sliced
1 tbsp lime juice (for avocado)
2 tbsp honey (for glaze)
2 tbsp lime juice (for glaze)
1 tsp chili flakes
Fresh cilantro and lime zest, to garnish
Instructions
1. In a bowl, mix cubed chicken with olive oil, honey, lime juice, minced garlic, salt, pepper, and paprika until well coated.
2. Heat a skillet over medium-high heat and cook the chicken for 8–10 minutes until golden and caramelized.
3. In a separate bowl, mix the cooked rice with butter, salt, lime juice, and chopped cilantro until fluffy and fragrant.
4. In a small saucepan, gently warm honey, lime juice, and chili flakes to make the glaze.
5. Slice the avocado and drizzle with lime juice to keep it fresh.
6. Pack the cilantro-lime rice into a small bowl or mold and invert onto a plate to create a tight stack.
7. Top the rice stack with the honey lime chicken.
8. Add avocado slices over or beside the chicken.
9. Drizzle generously with the warm honey lime glaze.
10. Garnish with fresh cilantro and lime zest. Serve immediately.

Use fresh lime juice for the best flavor—bottled just doesn’t compare.
