Ingredients

2 chicken breasts, sliced

2 tbsp honey (for chicken)

2 tbsp lime juice (for chicken)

1 tbsp soy sauce

1 clove garlic, minced

1 tbsp olive oil

½ tsp salt

½ tsp black pepper

2 cups cooked jasmine rice

1 tbsp butter or olive oil

Salt to taste

½ cup feta cheese, crumbled

2 tbsp fresh parsley, chopped

2 tbsp fresh cilantro, chopped

Zest of 1 lime

1 tbsp honey (for sauce)

1 tbsp lime juice (for sauce)


Instructions

1. In a bowl, whisk together honey, lime juice, soy sauce, minced garlic, salt, and pepper. Add sliced chicken and toss to coat. Marinate for 20–30 minutes.

2. Heat olive oil in a skillet over medium-high heat. Add chicken in a single layer and sear for 3–4 minutes per side until deeply golden and caramelized.

3. Continue cooking for 2–3 more minutes until fully cooked through and glossy. Remove from heat.

4. Gently toss the warm cooked jasmine rice with butter and salt to taste.

5. In a small bowl, whisk together the remaining honey and lime juice to make the drizzle sauce.

6. Pack the seasoned rice tightly into a small bowl or measuring cup, then invert onto a serving plate to create a rice stack.

7. Pile the caramelized honey lime chicken on top of the rice tower, letting it cascade slightly.

8. Crumble feta cheese generously over the chicken and sprinkle with fresh parsley, cilantro, and lime zest.

9. Drizzle the honey-lime sauce over the top, letting it pool around the rice.

10. Serve immediately while warm.

Use fresh lime juice—bottled doesn’t compare for brightness.

Marinate at least 20 minutes (or up to overnight) for deeper flavor.
