Ingredients
For the Shrimp:
400 g shrimp, peeled and deveined
2 tbsp honey
2 tbsp fresh lime juice
2 garlic cloves, minced
1 tbsp olive oil
½ tsp chilli flakes
Salt and black pepper, to taste
For the Rice Layer:
2 cups cooked jasmine rice
1 tbsp fresh lime juice
1 tbsp fresh cilantro, chopped
1 tsp olive oil
Pinch of salt
For the Avocado Layer:
2 ripe avocados, diced
1 tbsp fresh lime juice
1 tbsp fresh cilantro, chopped
Pinch of salt
Black pepper, to taste
For Garnish:
Fresh cilantro
Lime wedges
Extra chilli flakes
Lime zest, optional
Instructions
In a medium bowl, combine the honey, fresh lime juice, minced garlic, olive oil, chilli flakes, salt, and black pepper. Add the shrimp and toss until evenly coated. Marinate for 10–15 minutes.
Place the cooked jasmine rice in a bowl. Add the fresh lime juice, chopped cilantro, olive oil, and salt. Mix gently and set aside.
Add the diced avocado to a separate bowl. Add the lime juice, chopped cilantro, salt, and black pepper. Gently toss without mashing the avocado.
Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2–3 minutes per side, until pink, opaque, and cooked through.
Place a round food mould or cooking ring in the centre of a serving plate. Add a layer of seasoned jasmine rice and gently press it down.
Add a layer of seasoned avocado, followed by the honey lime shrimp. Carefully lift the mould straight upwards to reveal the layered stack.
Repeat with the remaining ingredients to create four individual stacks.
Garnish with fresh cilantro, lime zest, and extra chilli flakes if desired. Serve immediately with fresh lime wedges.
Notes
Don’t overcook the shrimp so they remain tender.
Keep the avocado chunky rather than mashing it.
Press the rice gently so the stack holds together without becoming compacted.
Use a round food ring for clean, attractive layers.
Prepare the avocado shortly before serving for the best colour and texture.
Serve immediately for the freshest result.
